Tonight we started out with roasted butternut squash soup. The main is Beef Wellington served with red bliss smashed potatoes, asparagus and a roasted shallot veal Demi glacé. I hope they save room for the Taramisu .

This is the 17th largest mega yacht in the world coming into St Thomas. It is 454 feet. It was the largest in the world back in 2006.
Designed by the original guru of yacht designers, Jon Bannenberg, Rising Sun was built by Lürssen for Oracle CEO Larry Ellison, and is currently owned by billionaire David Geffen. The yacht was delivered in 2004 and last refitted in 2011. Defined by banks of windows across the superstructure, Rising Sun has 86,000 square feet of living space in 82 rooms. It can accommodate 18 guests in nine cabins, with the capacity to carry up to 46 crew. The interior by Seccombe Design includes a gym, cinema, and wine cellar. The rear cockpit deck was designed as a basketball court. Geffen received a global media backlash in 2020 for his “tone deaf” social media posts that pictured himself on board his yacht during Covid-19 lockdown.

Last breakfast, our guests are big eggs Benedict fans. We had it five times in 12 days. We had two traditional, one lobster, one crab cake and today, the finale braised short ribs eggs Benedict.

Last night of our 13 day charter in the beautiful United States Virgin Islands. Beef Wellington is on the menu. Filet wrapped in puff pastry with duxelles and goose liver pate. It is searved with wilted baby spinach and a huge twice baked potato. We served a mushroom Cognac sauce on the side(to accommodate our non mushroom eater).
Flourless chocolate cake for dessert. Last impression is as important as first impression. Strong finish!

Marinated grilled filet mignon over fresh arugula topped with kumato cherry tomatoes, sliced red onion, Amish blue cheese and a balsamic vinegarette . Searched with a horseradish dipping sauce and fresh bread out of the oven.
