Happy Sunday ! Wishing everyone peace this holiday season, and fun adventures in 2025 - especially St John adventures!

If you've ever wondered about the art in the great room at Astral Villa, and what inspired it, here is a bit of background: as you may know, the US Virgin Islands flew under many flags over their almost 500 year colonization, including Britain, France, Spain and the Netherlands. The United States actually purchased the territory then known as the Dansk Vestindien (Danish West Indies) from Denmark on March 31, 1917 for $25 million dollars. The story with the 4 pictures, is that if you look closely, you'll notice they are actually Dansk Vestindien Jul postage stamps from the early 1900's (Jul is Christmas in Danish). We did want to encorporate a bit of the Danish Sin Jan history into Astral Villa, and we think that the stamps provide an historical nod and make a beautiful focal point. 6 days until Christmas!! One of the traditional holiday drinks that folks enjoy in the Caribbean is a spiced Sorrel tea. On island, you can find this refreshing drink at many of the local establishments, but sometimes I like to make a whole pitcher for us to enjoy. Usually I buy dried sorrel (also called Jamaican hibicus), but this past November on island, I found some fresh sorrel at Coral Bay Organic Gardens (also known as Josephine's), so I decided to try. It's super easy, and you can adjust the spices and sugar that you add to your own tastes - most important is to bring it to a boil and let it steep for at least a few hours. It is very refreshing over ice with subtle notes of the Christmas spices, and you can also add a little rum for an even mellower taste 😉 And, look at that amazing color, CHEERS!
