HANOI CUISINE - 10 MUST TRY DISHES IN HANOI
1. Phở (Rice noodle soup)
This national dish is usually eaten for breakfast, lunch and even dinner. Beef bone is cooked for hours or days with star anise, cinnamon, ginger and black cardamom to make a rich, clear broth topped with noodles, green onions and meat.
2. Bún chả (Noddle with grilled pork)
This dish is known as capital city's designated lunch. Fatty pork is grilled over charcoal and served in a hot, sweet broth made from fish sauce, vinegar, sugar, minced garlic and chili. Thin rice vermicelli, meatballs, pickled and fresh vegetables are served on the side. Use chopsticks to add the vermicelli and salad directly into the soup, mixing them together to get a mouthful.
3. Bún đậu mắm tôm (Vietnamese fermented shrimp paste noodle)
A match made in heaven with crispy golden tofu and fresh rice noodles are much loved Hanoi at lunch. Originally this dish is served with "mắm tôm" (fermented shrimp paste) but you can also choose fish sauce as a lighter alternative.
4. Bánh cuốn (Steamed rice rolls)
Rice flour stuffed with meat (minced pork), mushrooms, black fungus and shallots; paired with a side of pork sausage and fresh herbs. Cheap and fast, yet light and flavorful make it become one of the most popular breakfasts in Hanoi.
5. Gỏi cuốn (Fresh Vietnamese spring rolls)
The perfect dish for health-conscious eaters. These refreshing rolls are typically made with a pice of pork, shrimp, noodle and vegetables.
6. Bánh tôm Hồ Tây (West Lake shrimp cake)
This snack is originally made using freshwater shrimp from Hanoi's West Lake. Shredded sweet potatoes are battered and pressed into cakes with the shrimp embedded in the top. Then, the whole concoction is deep-fried in boiling oil. When you eat, wrap the cake in lettuce and then dip it in the special sauce.
7. Chả cá Lã Vọng (Vietnamese turmeric fish with dill)
You can find this dish in Hanoi's Old Quarter, at Cha Ca Street, named for the fish cake that have been made and sold there by the Doan family since 1871. La Vong fish cake made with snakehead fish, turmeric, shallots, garlic, sugar and fish sauce. The fish will be grilled or baked before pan-seering it with dill for a crispy outer crust. This dish is served with rice vermicelli noodle, peanuts and a side of fermented shrimp paste.
8. Bánh mì
The most famous street food across Vietnam. Banh mi's common fillings are pâté, cucumbers, fresh herbs, picked and condiments (mayo, chilli).
9. Chè (Sweet cold dessert)
A special dessert for summer. This sweet soup is made with varied ingredients (taro, sweet potatoes, red mung bean paste, coconut milk and crunchy roasted peanuts...) mixed together and served in a large glass or in a bowl. This layered dessert offers a different flavor in every spoonful.
10. Egg coffee
Most famous coffee in the north of Vietnam. It's a thick, dark coffee topped with egg yolk whipped with condensed milk into an airy froth.

Water puppetry - Unique way to tell Vietnamese folk tales.

Water puppetry also known as "múa rối nước" in vietnamese, means making puppets dance on water. This unique form of traditional art arose in the Red River Delta and other rice-growing regions of northern Vietnam a thousand years ago, during the Ly dynasty. Villagers staged the water puppet performances to celebrate the end of the rice harvest or simply just for entertainment. They also believed that the shows kept the naughty spirits away from any mischief that could harm their crops. Water puppetry as a folk-art form evolved from serving everyday people to a show for royalty. And because the original story of water puppetry comes from Vietnamese farmers, the shows reflect the culture of ancient Vietnamese, which is primarily agricultural.
Farmers took the art seriously from the beginning and kept the secret of how to control the puppets close to their chest. They passed skills down through the generations, but only to sons, for fear off daughters marrying outside the village and revealing their magic formula. Even today, puppeteers must train for three years before performing, and their methods are often kept a family secret.
Water puppetry continues to fascinate audiences many centuries later and is a cherished intangible cultural heritage of Vietnam.
