Lotus is known as an exquisite flower, symbolizes the purity, serenity, commitment and optimism of the future as it is the flower which grows in muddy water and rises above the surface to bloom with remarkable beauty. With the love for lotus, Vietnam have voted it as the country’s national flower
Lotus flowers can be many different colours, and each carries its own meaning. White represents purity, while pink shows a devotion to Buddha. Blue, with its wisdom and logic, represents enlightenment. Purple shows spirituality, and green is the colour of rebirth.

As well as being beautiful to look at, and having a wonderful fragrance, lotus flowers have other uses: the young stems are used in salads, the stamens can be dried and made into a herbal tea and the lotus seeds are eaten raw, dried or boiled. Someone said : “Travel is discovering new or special things in fother new lands”

𝗣𝗶𝗰𝗸𝗹𝗲𝗱 𝗰𝗮𝘀𝘀𝗮𝘃𝗮 𝗹𝗲𝗮𝘃𝗲𝘀 𝗮𝗿𝗲 𝗼𝗻𝗲 𝗼𝗳 𝘁𝗵𝗲 𝘀𝗽𝗲𝗰𝗶𝗮𝗹𝘁𝗶𝗲𝘀 𝗼𝗳 𝘁𝗵𝗲 𝗥𝗲𝗱 𝗗𝗮𝗼 𝗲𝘁𝗵𝗻𝗶𝗰 𝗽𝗲𝗼𝗽𝗹𝗲 in Yen Bai province. The dish is simple, but requires careul preparation, from plucking, rinsing, and salting the leaves.

👀👀👀𝙏𝙤𝙗𝙚 𝙢𝙞𝙣𝙙𝙛𝙪𝙡 𝙩𝙝𝙖𝙩 𝙣𝙤𝙩 𝙖𝙡𝙡 𝙘𝙖𝙨𝙨𝙖𝙫𝙖 𝙘𝙖𝙣 𝙗𝙚 𝙝𝙖𝙧𝙫𝙚𝙨𝙩𝙚𝙙 𝙬𝙞𝙩𝙝 𝙚𝙙𝙞𝙗𝙡𝙚 𝙡𝙚𝙖𝙫𝙚𝙨.
There are many cassava cultivars, so it’s quite difficult to differentiate one from another. According to cooking practices of local people, white cassava with green leaves is preferred for this dish, the leaves are transferred to a sealed jar after being mixed with salt for fermentation. The more you squeeze the leaves with the salt, the better the dish is. By squeezing, you can press out all the bitter flavor. The fermented cassava leaves have an even yellow color, and release an attractive aroma, leaving a simple taste that is unforgettable.

🍽🍽🍴Delicious fermented 🍴🎯vegetables is using boiled water that has been cooled to around 30 degrees Celsius. The salted leaves must be submerged into the water. The jar should be sealed with layers of D**g leaves or banana leaves.
Pickled cassava leaves take 1 week to be fully fermented. They can be cooked with fish, egg, and ground meat. This dish does not need any seasoning on the vegetables. They cook pickled cassava leaves with fish caught in the spring. The dish has a mildly sour taste from the pickles and smokey smell from roasted fish. It takes just 5 to 10 minutes to prepare this dish. This preserved food can be served as a side dish, or can be used as a source of acidity in Vietnamese sour soup
Pickled cassava leaves can be served with steamed sticky rice. Besides this food, you also have chance to try other joyful specials such as Salted Pork, Sticky Rice hunchback Cake(Banh Chung Gu) , Meat upstairs kitchen

🍌🍌🍌Have you ever tried a banana flower salad? Banana flower salad is very popular in Vietnam. It's a dish that has a wonderfully crunchy and fresh texture
The dressing is the most important part of the salad which is the mixing of including sugar, vinegar, lime juice, and fish sauce. Garlic and chili are pounded to a smooth paste and added to the dressing. Mix the prepared banana blossoms with the boiled chicken, sliced carrots, cucumber, onion, and some Vietnamese herbs. Toss with the dressing and topped with chopped roasted peanuts.

Vietnamese festivals are celebrated according to the Lunar Calendar. Buddha’s Birthday, also known as Vesak and Le Phat Dan, is celebrated on the full moon day of the fourth month according to the lunar calendar or in April or May according to the Gregorian calendar.

The day is considered to be of utmost importance in Buddhism as on the day ’Vesak’, Gautam Buddha took birth, attained enlightenment, and achieved Nirvana. Hence, this day is celebrated widely in Vietnam where natives perform various rituals and take part in exhibitions and cultural performances. Temples are decorated and ’Bathing the Buddha’ ritual takes place along with performing charity and hoisting of the Buddhist flag. At dusk, candles are lit on the floating lotus flowers and are flown into the river. Visitors travelling in major cities of Vietnam must not miss this joyful day.

May is the time when Vietnam changes its wheather from spring to summer

Notably, in May, the intersection of many mixed weather flows occur when the Northern region shows signs of heat waves, hot and grizzle weather; whereas the South gradually enters the wet and humid season.

Hung King Temple Festival

❤❤❤The festial is taken placed from the 8th to the 11th day of the third lunar month, main festival day on the 10th day of the third lunar month.

💚💚💚The main Place: Nghia Linh Mountain, Hy Cuong Commune, Viet Tri City, Phu Tho Province where Kings Hung are worshipped(18 generations who established Van Lang State, the predecessor of the present day Vietnam)
💥💥Objects of worship: Kings Hung.

This is the ancestors' death anniversary of the whole nation. At the same time with incense-offering ceremony at Hung Temple in Phu Tho Province, sacrifice-offering ceremonies at Hung Temple in Ho Chi Minh City, Nha Trang and other provinces are aslo celebrated.Vietnam people are off from working on the 10th of the third lunar month

In March, when it gets warmer with drizzle, ‘Hoa Gao’ (known as Moc Mien or Po Lang in Vietnamese), whose scientific name is Bombax ceiba, is in full bloom.
