HUE SPICY BEEF NOODLE SOUP
Thua Thien Hue is located in the Central region of Vietnam. Hue, unlike the capitals of Hanoi and Ho Chi Minh City, is ancient, peaceful, and strangely poetic. This land has over 350 years of history as the capital of Vietnam and this food was made for the royal during Nguyen Dynasty. If you travel throughout Vietnam, you can enjoy Bún bò everywhere, but the most famous is Bún Bò Huế- Hue beef noodle soup. This dish is known as beef noodle soup or beef noodle soup with pork rolls in Hue. Other areas refer to this dish as Hue beef noodle soup to indicate its origin.
The main ingredients of Hue beef noodle soup include: rice noodles, pork rolls. Sometimes, beef noodles are also added to rare beef, crab cakes and other ingredients. Hue people divide food and drink into three categories: “khẩu thực”, “nhãn thực”, and “tâm thực”. “Khẩu thực”: eat with your mouth; eat to survive. “Nhãn thực” are eaten with the eyes-enjoy the beauty in color, shape, and the way to present creates high aesthetic effect. “Tâm thực” - eat with all your heart. Through the way people eat, they reveal their ways of thinking and feeling about life. I like the way Hue people cook: it's sophisticated, meticulous, and one-of-a-two.
Just 1 bowl of beef noodle soup has gathered all the quintessence of cuisine: sour, spicy, salty, sweet, fatty. Hue beef noodle soup is also ranked as one of 12 Vietnamese dishes with the value of "Asian cuisine" by the Asian Record Organization.
When you arrive in Hue, you will notice that the women selling beef noodle soup are frequently referred to as "Mệ." Originally, Mệ was a name for all Nguyen dynasty aristocrats, regardless of age or gender. Today, the word "Mệ" is primarily used to refer to mothers and grandmothers in order to express affection and respect for those who prepare beef noodle soup, and because Hue people are as friendly and close as family members.
