The history of Saigon Central Post Office dates back to the late nineteenth century, when Vietnam was part of French Indochina. After successfully invading Saigon in 1863, the French started establishing a communication system by constructing Saigon Telegraph-wire Department, which was the precursor of Saigon Central Post Office. The designer of this building was Gustave Eiffel, who was the architect of some iconic constructions including the Eiffel Tower (Paris), Statue of Liberty (New York) and Long Bien Bridge (Hanoi).

SAIGON NOTRE DAME BASILICA

The formal name of Notre-Dame Cathedral is Basilica of the Immaculate Conception and still serves as a religious institution to Catholics in HCM city.
Saigon Notre Dame Basilica was constructed from 1863 - 1880 during the French colonial occupation of Vietnam. This is one of Saigon's largest and most distinctive churches. The Basilica not only displays distinct neo-Romanesque features, such as the two giant bell towers (holding six bronze bells), ornate stained glass window, and a red brick but it also strives to demonstrate Catholicism and the greatness of French civilisation at the time.

The following are the Basilica's distinguishing features:

All materials, including cement, iron, steel, screws, screws, and so on, are imported from France. The outside of the building, in particular, is built with bricks created exclusively in Marseille - France, without additional plastering, but still thus preserves its beautiful pink hue and does not stick to moss. The whole cathedral has 56 stained glass windows manufactured by Lorin brand in the province of Chartes - France
All architectural lines and patterns are inspired by Gothic and Roman architecture: two rectangular columns represent the twelve apostles, 56 glass doors reflect biblical personalities or events, 31 round rose shapes, and 25 colorful glass windows combine to make incredibly attractive images. At the summit of the tower is a 600kg crucifix. The inside is illuminated by electricity rather than candles at night, providing an appealing image. The foundation of the church is uniquely constructed to bear ten times the load of the complete edifice above. The cathedral's capacity is 1200 people, and you may have observed that there are no fences or walls around it.
The Basilica contains two bell towers, each 57.6 meters high, and they have six huge bronze bells weighing 28.85 tons, including six tones (Sol la si do re mi) that are regulated by electricity from below. The church only rings the bells from 5 a.m. and 5:30 p.m. on weekdays. On the Christmas Eve will ring all six bells, which can be heard for up to ten kilometers.
A pipe organ, one of the two oldest instruments in Vietnam today, may be found in the Basilica. This instrument is handcrafted by international .professionals and is specifically built so that when played, the sound is loud enough for the entire church to hear without making a fuss.

Outside the church stands a majestic four-meter-tall statue of the Virgin Mary that was added in 1959. The statue was the site of a “miracle” in 2005 after visitors claimed to have witnessed the statue shedding a single tear. Statue of our Lady standing straight, holding the globe in her hand, the left side of the globe shaped like a cross, Our Lady's gaze staring up into the sky as if praying for peace in Vietnam and the world. A bronze plaque on the statue reads, "Queen of Peace - Pray for us..." 17.02.1959

The Basilica is currently undergoing a massive renovation project. The costly endeavor is being funded by philanthropists and church-goers and it includes a new tile roof, a reinforced foundation, repairing the bell system, repalcing broken sheets of stained glass, replacing damaged bricks, and other general maintenance.

HUE SPICY BEEF NOODLE SOUP

Thua Thien Hue is located in the Central region of Vietnam. Hue, unlike the capitals of Hanoi and Ho Chi Minh City, is ancient, peaceful, and strangely poetic. This land has over 350 years of history as the capital of Vietnam and this food was made for the royal during Nguyen Dynasty. If you travel throughout Vietnam, you can enjoy Bún bò everywhere, but the most famous is Bún Bò Huế- Hue beef noodle soup. This dish is known as beef noodle soup or beef noodle soup with pork rolls in Hue. Other areas refer to this dish as Hue beef noodle soup to indicate its origin.

The main ingredients of Hue beef noodle soup include: rice noodles, pork rolls. Sometimes, beef noodles are also added to rare beef, crab cakes and other ingredients. Broth is the soul of Hue beef noodle soup. After pork rolls is stewed soft with lemongrass, add some spring rolls or crab cakes, the chef will add a little bit of “Mắm ruốc” - Hue's own unique flavor. Mắm ruốc made from sea shrimp. The finished broth of Bún bò will have the distinctive red color of cashew oil as well as the flavors of lemongrass and mam ruoc, and the beef will be dipped in the broth after it has been thinned, adding a little chili powder and spices to the bowl of beef noodle soup. Consume alongside raw vegetables, herbs, lettuce, young sweet cabbages, and thin iron banana flowers. A lot of chili is used in a bowl of beef noodle soup. Because of the influence of the immigrant population, to cure diseases, and also because of the country's characteristics on rainy days, Hue people prefer spicy food.

Hue cuisine is rustic, light in depth, and assertive of the identity of an elegant and gentle land. Hue people eat and drink with three goals in mind: cheap, delicious, and visually appealing. A dish that is not visually appealing is not a dish. Hue people divide food and drink into three categories: “khẩu thực”, “nhãn thực”, and “tâm thực”. “Khẩu thực”: eat with your mouth; eat to survive. “Nhãn thực” are eaten with the eyes-enjoy the beauty in color, shape, and the way to present creates high aesthetic effect. “Tâm thực” - eat with all your heart. Through the way people eat, they reveal their ways of thinking and feeling about life. I like the way Hue people cook: it's sophisticated, meticulous, and one-of-a-two.
Just 1 bowl of beef noodle soup has gathered all the quintessence of cuisine: sour, spicy, salty, sweet, fatty. Hue beef noodle soup is also ranked as one of 12 Vietnamese dishes with the value of "Asian cuisine" by the Asian Record Organization.

When you arrive in Hue, you will notice that the women selling beef noodle soup are frequently referred to as "Mệ." Originally, Mệ was a name for all Nguyen dynasty aristocrats, regardless of age or gender. Today, the word "Mệ" is primarily used to refer to mothers and grandmothers in order to express affection and respect for those who prepare beef noodle soup, and because Hue people are as friendly and close as family members.
