FOOD TOUR IN PHU YEN
In Phu Yen, there are some dishes that are hard to find anywhere else. Let’s go to Phu Yen and discover their great taste!
1. Mat Ca Ngu - Tuna Eyeballs:
This dish is a local delicacy. Tuna eyeball dishes are fatty and have a unique flavor, you can taste the sweetness and spiciness remaining on your tongue while enjoying. Tuna eyes are processed and cooked meticulously. The eyes (after being cleaned and preliminary treated), only eyeballs, and some herbs such as jujube, goji berry, coriander, and scallion, are put in earthenware jars and cooked. Then they will be served with shredded shiso and mustard leaves.
2. Banh Xeo - Vietnamese Pancake:
Banh Xeo is another traditional dish of Phu Yen. Banh Xeo in Phu Yen is made from rice flour, bean sprouts, minced meat, and shrimp or squid; If diners request, the cook can add eggs to enhance the taste. When the pan is hot, the cook will spread oil all over the pan, then add meat, shrimp, bean sprouts, and a mixture of ground rice flour with water. The cook will cover the pans, and wait for about 1 minute for the cake to be well cooked and become crispy.
The cake is hot and crispy, with delicious seafood topping. This dish is served with lettuce, herbs, and fish sauce. The recipe to make fish sauce served with Banh xeo is also a secret of the cook because it will affect the taste of the dish a lot. People can also wrap and roll banh xeo with rice paper, and then dipped into the special fish sauce.
3. Banh Canh He - Chive Noodles Soup:
Being a simple dish, Banh Canh He still attracts many people. The ingredients just include fish cake, quail eggs, noodles, fish bone broth, and a lot of chopped chive.
Noodles in Banh Canh He is made from rice flour, soft and flexible, not chewy or friable. The fish cakes are fried and then cut into thin pieces. The broth tastes good and not too oily. Especially lots of chives are added to enhance the aroma of the soup.
4. Banh Hoi Chao Long (Pork Offal Congee with Banh Hoi):
Banh Hoi is a Vietnamese dish consisting of rice vermicelli woven into intricate bundles, and often topped with chopped scallions or garlic chives sauteed in oil, served with a complementary meat dish.
Pork Offal Congee has the potential to spark a heated debate. But I can’t deny that it has a very special taste. Every ingredient is simmered until tender while the meat juices enrich the broth. It’s garnished using fresh herbs and aromatics to highlight the variety of textures. The grains have a velvet melt-in-your-mouth texture. The offal is soft but still enjoyable to chew. The offal variety is exciting because each spoonful is like uncovering a surprise; you just don’t know what you’ll get.
Maybe that’s the reason why people in Phu Yen really love this dish, and can eat it for almost any meal during the day.
5. Bun Muc (Squid Noodles Soup)
Phú Yên squid noodle soup uses small-sized squids which have sweet and tender flesh. Chicken bone or pork bone can be used to cook the broth. Tomatoes and pineapple are two common ingredients to increase the umami, sweet and sour taste of the soup.
This dish is served with bean sprouts, lettuce, and herbs, which is perfect for hot days. Sometimes in Phú Yên, the dish can be served with corn noodle, which is made from corn kernels instead of rice grains. The making of corn noodles is much more complicated than its name. Corn kernels are pounded with husks, strained, and squeezed then soaked in water overnight. The corn paste then gets sprinkled with water to retain the moisture for three days until gets kneaded and boiled. So, traditional corn noodle is a real specialty in Phú Yên, though it is not very popular now.
