Quinta das Azinheiras is a single-estate unblended unfiltered olive oil from the northern Alentejo region of Portugal. Quinta das Azinheiras' olive groves are situated in the foothills of the São Mamede Mountains near to the historic hilltop town of Castelo de Vide. No irrigation, artificial pesticides or fertilisers are used in the groves. The olives are allowed to ripen until black and are picked by hand and cold pressed in a local mill. It is artisan oil produced in limited quantities. The result is rich aromatic oil with a deep green-gold colour. Its distinctive fruity flavour is without any astringent or peppery after-taste. It is particularly suited to use as dipping oil with bread, for dressing olives, salads or tomatoes and in pasta sauces, casseroles and roasts. The Alentejo is known for its cold winters and hot dry summers. It is a land of open rolling plains, groves of cork oaks, holm oaks and olives. The main variety of olive in the northern Alentejo is the Galega. Other varieties grown include the Blanqueta, Cobrançosa, Azeiteira, Carresquenha and Redondil. The wildflower-rich grasslands under the trees are grazed by local breeds of Alentejano cattle, black, brown and caramel coloured sheep and Black Pigs. This environmentally sustainable form of mixed silviculture and pastoralism creates an ecosystem known as the Montado, which is greatly beneficial to wildlife. Rising from the plains, the wooded São Mamede Mountains, with their chestnut groves, create a local microclimate bringing rains that feed the local rivers, aquifers and mineral water springs.
