What to do when the coffee you make taste sour, even if you have well roasted coffee beans...

It might be that you are using a wrong grind setting.

Adjust your grinder to grind the beans finer. Make another cup of coffee. Continue grinding finer and finer until the coffee taste dry or bitter. Then turn your grind setting back one step to the previous setting and that should give you the best extraction for a delicious cup of coffee.

In 2001 the movie A Knight’s Tale was released.

Nothing epic, but very entertaining and fun non the less.

It’s the medieval story of a peasant named William Thatcher. William poses as a knight to compete in the tournament of the nobles. He doesn't compete in just one event at the tournament. He enters the sword and jousting event. Making a name for himself. He then competes in more tournaments all over the country winning many accolades.

And like William Thatcher, our Legend blend can compete in many events. The Legend can be used in many different brewing methods. From the French Press, espresso, Moka Pot, Pour over, to the Syphon.

I was totally surprised when I first tasted it as a pour over. Usually I prefer a light roast for my pour over, so I wasn’t sure I would enjoy the Legend as a pour over. But boy, was I wrong. It was a flavour bomb in my mouth. Only problem now is that I cannot get enough of it.

What the first gramophone record, Coca-cola and Honduras has in common…

The year is 1894…

The world sees Coca-Cola for the first time in a bottle and hear music for the first time on a gramophone record.

And in Honduras, a Central American country, 2000 ton of green coffee beans are produced.

Since 1894 Honduras has come a long way in their coffee production. Today they are the fifth largest coffee producing country with an estimate production of 420,000 tons of green coffee beans in 2020. They are the largest producer in Central America and the third-largest in Latin America.

For years, Honduras was famous for its bananas. It accounted for over 80% of its exports in 1929. Coffee production began in earnest during the sixties. By 1996 coffee was the top export commodity of the country.

Why all these facts about Honduras?

The origin of coffee is mostly a mystery. And where there is a mystery, legends are born...

The most popular legend in the coffee world is the legend of Kaldi and his dancing goats.

The legend goes something like this...

Once upon a time there was a Shepard named Kaldi who lived in Ethiopia. One day while herding his goats, he noticed they were prancing and dancing around. They were usually “irreproachable” so he knew something strange was going on.

On investigation he discovered the goats were eating red berries and shiny leaves from a tree he did not know. Kaldi tried some of the berries and soon joined his goats dancing.

One day they were eating and dancing when a monk passed by and saw what was going on. He stopped to look at them dancing and when he asked Kaldi what they were doing, Kaldi told him about the berries. The monk was ecstatic. You see, the monk was always falling asleep in the middle of prayers and when he heard that these berries gave Kaldi and his goats so much energy, he new it was the answer he was looking for to help him stay awake.

He took some of the berries to the monastery where he dried and boiled them.

The new drink soon became a favourite with his fellow monks who had the same problem falling asleep when praying.

Soon after this, coffee spread around the world and is now consumed by millions each day.

That’s the legend of Kaldi, his dancing goats and the monk.

Today, a new legend is born…

What does coffee and the ocean have in common?

The answer... Waves

In coffee, waves refer to trends or movements in the coffee world.

The first wave of coffee is seen as the lowest quality coffee, also known as commodity coffee. Instant coffees fall under this wave. It's coffee that are usually super dark and bitter. No care is taken when sourcing the green coffee or when roasting the coffee. Most often its coffee that is bought at the supermarket in ground form.

The second wave of coffee was ushered in with brands like Starbucks.
In the second wave the focus is on flavoured drinks and baristas who are more passionate about the cafe than the coffee beans. The coffee is dark and bitter.

With the arrival of the third wave of coffee, the focus shifted to the coffee bean. The origin, sourcing, quality, and roasting is of great importance. Coffees from the third wave are lighter roasted to highlight the sweet, fruity, inherent flavours of the coffee. Third wave coffee roasters see coffee as a "food" and not a commodity.

And that brings us to waves in the ocean...

The Double-Up, Crumbly and Barrel waves.

A Double-up wave forms when two waves meet. The energy from the two waves combine and creates a wave that is large and highly powerful.
