🍕EASY PIZZA RECIPE AND A WINE PAIRING🔥

I am obsessed with making my own dough! I either use my .sa or if the weather sucks, I put the stone in oven preheated to 240 deg.

Dough:

4g instant yeast
250g Flour
1 TBS honey
1 tsp salt
120ml water
65ml beer

Mix water, beer and honey in a small bowl or jug. Sprinkle yeast over and allow it to bubble for 5-10 mins.

Mix flour and salt in a large bowl. Make a well in the center and using a spoon slowly pour and incorporate the liquid into the dry ingredients. When it comes together, turn out into floured surface. Knead for a few mins - it is a sticky dough so don’t be alarmed. Shape into a ball, line a bowl with a little bit of olive oil and place the dough into the bowl. Cover with damp tea towel and keep it in a warm place to prove.

After about 1/2 an hour, gently knock back the dough, divide into 6 smaller balls, and place back in the bowl to prove until ready to roll bases ☑️

The perfect pairing for a thin, crispy, cheesy pizza is the Millennium Red:

A dusty, earthy nose with raspberry and mulberry fruit, cinnamon spice and a hint of mint, promising a complex wine.

🧡 POSITIVE NEWS ALERT🧡
I haven’t posted too much about the journey we have been on the last ten months but most of you know it hasn’t been easy.

Bo was diagnosed with Bilateral Retinoblastoma at just under 8 months old.

What is retinoblastoma?

In support of Retinoblastoma Awareness, here are the details:

Retinoblastoma is a kind of eye cancer that starts as a growth of cells in the retina. The retina is the light-sensitive lining on the inside of the eye.

The retina is made up of nerve tissue that senses light as it comes in through the front of the eye. The light causes the retina to send signals to the brain. The brain interprets the signals as images.

Retinoblastoma happens most often in young children. It’s usually diagnosed before age 2. It most often affects one eye. Sometimes it happens in both eyes.

Bo had three tumors between both eyes. Her right eye had to be enucleated (the medical term for removal) as the tumour was too big to treat. The two in her other eye were treated over 16 weeks of gruelling chemo therapy. After a few weeks of fighting for veins on her poor little body (up to 9 attempts one week!) we made the decision to put a port line in, allowing the chemotherapy drugs to be administered directly into Bo’s blood stream. This was surgically implanted in November last year.

Bo’s chemo ended in January this year and her two small tumours in the left eye are calcified and considered DEAD. This doesn’t mean we are in the clear. She has monthly EUAs (examinations under anesthetic) to ensure those tumours remain dead. But the good news for our little family is that yesterday, Bo had her port line surgically removed. Indirectly this means that her team of professionals don’t foresee the need for any more chemotherapy. We celebrate every win, and this, for my little family is a BIG win.

The Mill St Bistro! This little spot recently opened its doors in the heart of Stellies (affectionately named ‘Wine Town’ by the charming Som, Tinashe). Excellent cuisine as per the label, Bistro.

However, Bistro with a Michelin twist, thanks to Chef Phil Carmichael. Look forward to big flavour, smoky wood fired flatbreads, baked camenbert, local produce, comfort food, classic favours and an excellently curated wine to match!

🍑 BO THE BRAVE🍑
Our little girl is doing so well, she’s walking, talking and meeting milestones. Doctors are happy with her progress, we just have monthly EuA’s to ensure tumors remain dormant
She loves giving hugs and kisses.

She can sing twinkle twinkle and baby shark.

She loves going down her little slide.

She has better rhythm than both of us put together and loves a boogie!

She can almost feed herself.

She makes us laugh with her little personality.

These are the things we will remember about this season. Our happy, healthy little Bo.
