When our orchards give us plums, we have no choice but to fill the villas with them and make some seriously delicious compote for breakfast.
Get a taste of La Clé with Mel’s Plum Compote recipe at home.
Ingredients:
8 plums, halved and stoned
3 tablespoons light brown sugar or honey (this can be adjusted depending on the ripeness of the plums, I suggest less is more, and adjusting to your taste)
4 tablespoons water
1 cinnamon stick
Star anise
Squeeze of lemon
Instructions:
Place the plums, brown sugar, cinnamon stick, and star anise in a saucepan. Cook over medium heat for about 10 minutes (adding water if it caramelises too quickly), until the plums are tender and the syrup turns glossy. Finish off with a squeeze of lemon to balance the sweetness.
This dish is fabulous with yogurt and muesli for breakfast, works wonderfully as an appetizer topped with goat’s cheese, thyme, and pistachios on bruschetta, or makes a delicious dessert served with vanilla ice cream or frozen yoghurt.
