Pumpkin🎃Fritters
Banana🍌 Fritters
Sweetcorn 🌽 Fritters

PUMPKIN FRITTERS)
(Melanie Kramar)

Ingredients:
500ml self-raising flour
2 cups cooked mashed pumpkin
Pinch salt
1 1/2 tbs sugar
1 egg, lightly beaten
2 tbsp melted butter
1 cup milk
1 tsp vanilla essence
oil for shallow frying
Cinnamon sugar (1 tbs sugar mixed with 1 tsp cinnamon powder)

Method:
Sift flour and salt into a bowl and stir in sugar. Mash pumpkin egg and butter. Add to the flour and using electric be**er start mixing while adding enough milk to make a thickish batter. Heat 1 tbsp oil in a large frying pan and drop batter, a tbsp at a time. Fry fritters until golden brown, on both sides. Sprinkle with cinnamon sugar. (Note: I omitted the vanilla because I want to taste the pumpkin😋)

Banana Fritters

Tried & Tested by Hajira Farook


2 bananas mashed
2 eggs
Pinch of cinnamon
2 tsp baking powder
2-3 tbs sugar
1 cup flour adjust

In a bowl mash bananas, add eggs, cinnamon, baking powder and sugar. Then add the flour and milk until you get the consistency of a thick pancake batter.
Drop spoonfuls in hot oil.

Feriel Sonday's Sweetcorn fritters

1 tin Koo cream style sweet corn
2 eggs
½ tsp salt
1 tsp ground green chilies
chopped Dhania
3 chopped spring onions
375 ml cup self raising flour

Mix all above ingredients together
Drop tablespoons of mixture in hot frying pan greased with a little oil
Fry till golden brown
Serve hot with chutney. 🌳🌽🌽
