There’s no doubt about it.
Omicron and this “unofficial lockdown” has meant a downturn in trade but we’re optimistic things will turn in the not too distant future. Those clouds and their silver linings though, it’s meant our kitchen has some extra time and the addition of 2 School Based Apprentice Chefs (Breezer. + Maxi) to our team has helped shape a new philosophy. We’re hoping to give this next generation as many skills as possible from pickling & fermenting to cheese & yoghurt making, Bread & pastries, there’s a fair bit going on in that little kitchen atm.
has been teaching the guys how to make Coconut Yoghurt. It’s creamy, rich and delicious. But there’s a trick to making it this good. You need to “hide it” overnight. Yep, I’m talking Peek a Boo 👻.
