Derived from the crocus sativus flower, saffron (azafran in Spanish) is a key culinary ingredient in Spanish cooking. This traditional yet very exotic and precious ingredient is so infused in the culture of Spain that there are festivals in its honour. Without saffron a seafood paella is flat. The one in the picture I made and the saffron is fabulous. It was one of the first Spanish dishes I tried creating.

A unique small group tour to explore the traditions and culture of Central Spain.
