Our next few posts will focus on Ethiopian cuisines. Lets start with the one only Teff!!
Teff, (Eragrostis tef), is an ancient crop thought its name to originate from the Amahric word 'Teffa' which means 'lost' and likely to refer to the minute seeds. It has been domesticated more than 6000years ago in Ethiopia.
It's flour is extensively used to make 'Injera', a soft flatbread prepared from slightly fermented batter. Teff is revered for its taste, its nutritional value, and its shelf life.
