We are commercial chilli growers in Bedfordshire. Shawn was raised in Idaho in the United States and from the age of 14 worked in the pea fields of northern Idaho and eastern Washington. He graduated high school and joined the US Air Force serving on active duty for 11 years at several assignments both in the United States and overseas. Honorably discharged in 1993 Shawn along with his wife Joanna

ventured in to the world of commercial Chilli Growing here in the UK. Their business has won many awards including Horticultural Weekly’s Grower of the year 2011 and Chilli Grower of the Year on several occasions. Both Shawn and Joanna have appeared on radio and television both as a chilli lover and growing expert. Shawn delivers workshops on chilli growing and consults for both charities and businesses on establishing commercial growing operations in both conventional and hydroponic production methods. Shawn collaborates with many people in the industry on hot sauce production and his company grows and supplies chillies to a number of business in the UK and Europe.

NEW PUBLICATION!!! ⬇️ THE CHILE CULTIVARS OF NEW MEXICO STATE UNIVERSITY, 1913–2022 (http://bit.ly/3mTbo57): New Mexico State University has the longest-running continuous chile pepper breeding and genetics program in the world. The chile improvement program officially began at the New Mexico College of Agriculture and Mechanic Arts (now NMSU) in 1888 with Dr. Fabián García, NMSU’s first horticulturist. He began breeding for the improved New Mexican pod-type in 1884, and in 1913 he released ‘New Mexico No. 9’. Improvement of chile cultivars for New Mexico through breeding and genetics is a major research priority at NMSU. All New Mexican pod-type chiles grown today gained their genetic base from cultivars first developed at NMSU (Bosland, 2015).

We have some exciting news to share. THE PALLET CAFE are coming to THE CHILLI RANCH! 🎉🌶

The Pallet Café is an established, premium, artisan eatery that has been serving top notch cuisine here in Bedfordshire for more than three years. They have built a huge following of very discerning and loyal customers from across Bedfordshire and the Three Counties and we are enormously fortunate to have them joining us here at the Chilli Ranch.

The café is the brainchild of Jonathan and Paige and everything about it illuminates their own values of quality and sustainability. They specialize in all things homemade, fresh, and local. They artistically re-use, re-purpose, and upcycle everything from the interior décor to the equipment used in their kitchen, and even the leftover coffee grounds which are used for garden fertiliser.
The menu is a smorgasbord of everything delicious and sweet, from their best selling sweet chilli sausage rolls to specialty coffees, milkshakes, iced drinks, sharing platters, small plates, specials and much more.

They have been rated 5 out of 5 for their outstanding food and service based on customer reviews on both Google and on their own page.

Over the next few weeks, they will be settling in here at the ranch and putting their own, unique touch on the space. Watch out for posts from us and them when they are ready to start serving food. It's been an interesting week in weather with three named storms arriving each on the heels of the previous one. First Dudley, then Eunice, and as I write this Franklin is battering the Chilli Ranch. The big glasshouse and tunnels have remained unaffected although we have lost one of our signs on the road, a small greenhouse, and a fence panel. We may not rush to make the repairs though since the meteorologists are predicting more strong winds later in the week in the medium range forecasts. Batton down yhe hatches. 🔥
