Have you ever seen a sea of fire on cold spring nights in South Tyrol?
On cold spring nights, when temperatures in South Tyrol's valleys drop below zero, wine growers prepare for the low temperatures by protecting their vineyards with frost-proof candles. These candles, carefully arranged between the vine rows, not only safeguard against low temperatures but also create a magical atmosphere and an incredible spectacle. 🕯️
Fruit growers have always struggled with these atmospheric phenomena, which threaten their daily work and the end-of-season harvest. The technique of using anti-frost candles was perfected as early as the 1960s. During the riskiest periods, farmers diligently monitor the forecasts and, when potential frosts are predicted, they act well in advance to prepare the vineyards by strategically placing the candles and ensuring everything is ready for activation.
The use of this technique contrasts fascinatingly with that employed in nearby apple and fruit tree cultivations, where water is sprayed to form a protective layer of ice over the small buds that will bear fruit. Thus, fire and ice prove to be two mirrored and spectacular strategies for preserving harvests, utilized with expertise and care by the South Tyrolean growers.

Every year, on May 1st, the "Waale" (irrigation channels) are filled with water from the Etsch River. Until October 30th, every day, every 12 hours, the Waaler (the person responsible for their care) diverts the water from the channels to one cultivated field or another, following a predetermined schedule.
By moving these barriers, the water overflows and floods the meadows, promoting soil fertilization and excellent hay that will later be used by farmers as fodder for the animals. This is a technique used exactly as it was 700 years ago.
The four irrigation channels of the Upper Venosta Valley have received coveted recognition from the UNESCO International Commission, which values this ancient agricultural technique.
