Kids get to plant their own tree and learn how important forests are while having fun. With excitement, they dig a hole for their little friend. And the story doesn't end there: adults often return years later, curious and nostalgic, to find the tree they planted as kids. What started as a response to post-war forest conditions is now even more important. The forest is our life source and a precious legacy we must protect.

🐑 Eva is a true shepherdess. Every year in early June, she crosses the alpine ridge to lead her flock of three to four thousand sheep to the Ötztal valley in Austria. Despite snowfields and ravines, she tackles the challenge with the same passion as her father and grandfather.

The sheep transhumance in the Val Senales - Schnalstal is a 600-year-old tradition, deeply rooted and recognized by UNESCO as intangible cultural heritage. In September, sheep, dogs, and shepherds return to the valley and are welcomed with a big feast to celebrate the successful grazing season.

Imagine sipping a delicious cocktail made with Granny Smith apple, enriched with the delicate aroma of elderflower and the refinement of Alto Adige DOC Brut sparkling wine. A surprising and refined drink, perfect for special occasions! 🌟

Ingredients for one glass:
🔸1 Alto Adige IGP apple (Granny Smith)
🔸1 cl elderflower syrup
🔸1 dl Alto Adige DOC Brut sparkling wine
🔸Fresh mint
🔸Ice

Preparation:
🔸Wash the apple, cut it in half, remove the core, and juice it together with 6-8 fresh mint leaves.
🔸Fill a wine glass with ice cubes and add 4 cl of the freshly prepared apple juice.
🔸Pour in the elderflower syrup and top up with the sparkling wine.
🔸Stir gently and garnish with fresh mint or two thin apple slices.

Tip: The apple juice can be stored in a bottle in a cool place but should be consumed within a day to maintain its fragrances and flavors.

🐄💙 Siegfried Messner always knew that his destiny was tied to the land. Even as a child attending kindergarten, his greatest wish was to become a farmer. Today, Siegfried proudly carries on the family farm in Villnöss/Funes, following in the footsteps of his father, grandfather, and great-grandfather.

Siegfried's life is paced by the rhythm of nature, between work in the fields, long days spent outdoors, and caring for his "ladies," the cows he passionately raises.

All of Siegfried's commitment is reflected both in the way he treats his animals and in the quality of the milk that is produced. This, rich and pure, is the basis for South Tyrolean dairy products, characterized by an unmistakable taste and the scent of our pastures.

Here is a recipe to delight the eyes and the taste buds of your guests thanks to South Tyrolean Apple PGI!👇🍎

Ingredients:
For the base:
250 g of flour
120 g of salted butter
1 tablespoon of crème fraîche
80 g of sugar
1 teaspoon of vanilla sugar

For the vanilla cream:
400 ml of milk
4 egg yolks
120 g of sugar
2 tablespoons of vanilla sugar
30 g of cornstarch
100 ml of cream

For the apple filling:
4 South Tyrol apples PGI (Elstar)
80 ml of passion fruit juice
40 g of sugar

Preparation:

1) Prepare the dough by mixing flour, sugar, butter, and crème fraîche in a bowl until well combined. If the mixture is too sticky, add a bit more flour. If too dry, add a bit more crème fraîche. Let it rest in the refrigerator.

2) For the cream, pour milk, sugar, vanilla sugar, egg yolks, and cornstarch into a pot and heat while stirring constantly until the mixture becomes thick. Then incorporate the cream. Cover and refrigerate.

3) Wash the apples, cut them into quarters, and slice them thinly with a peeler. Marinate the apples with sugar and juice, then pour them into a pot and briefly heat them to make them soft and malleable.

4) To create the roses, lay one apple slice next to another, slightly overlapping them and roll them up. The more slices you use, the larger the roses will be. Save the marinade liquid.

5) Place the dough in the mold, stir the vanilla cream to remove any lumps, and pour it over the base. Place the apple rose slices on the cream.

6) Bake the cake at 180°C (356°F) in a convection oven for 30 minutes. Once baked, remove the cake from the oven and brush with the marinade liquid. Let cool and serve the cake cold.

Springtime in South Tyrol means warm days and cold nights, sometimes even below freezing. These cold nights can be dangerous for the apple blossoms that open in spring.

To protect against frost damage, farmers in South Tyrol use an old yet smart technique: they water the plants to fight the frost. When alarms go off at night to signal colder temperatures, farmers get up and go outside to start watering. The water sprayed on the blossoms freezes, and this ice actually releases heat, forming a protective ice layer that keeps the delicate blossoms and future harvest safe, giving us an unusual and beautiful morning show. 🌸

South Tyrol PGI Speck and Maple Syrup Cupcakes? Try this unusual combination and be amazed! 😋👇️

Ingredients:
100 g of sugar
90 g of flour
80 ml of milk
60 g of butter
1 egg
¾ teaspoon of baking powder
1 ½ tablespoons of maple syrup
½ tablespoon of vanilla extract
½ teaspoon of cinnamon
A pinch of salt

350 g of powdered sugar
120 g of cream cheese
2 tablespoons of softened butter
1 tablespoon of maple syrup

5 slices of South Tyrol PGI Speck
Maple syrup

Preparation:
1) Preheat the oven to 180°C (356°F) conventional or 160°C (320°F) with fan. Line a cupcake tray with 6 paper liners.

2) In a bowl or using a stand mixer, cream the butter with the sugar until light and fluffy. Add the egg, maple syrup, and vanilla extract. Then add the dry ingredients and, on low speed, add the milk.

3) Divide the batter among the liners and bake for 20 minutes. Let cool completely on a wire rack.

4) Increase the oven temperature to 200°C (392°F) and place the slices of South Tyrol PGI Speck on a baking tray lined with parchment paper. Spread a little maple syrup on the speck slices and bake for 12 minutes. Let cool on the parchment paper and cut into small pieces.

5) In a large bowl, beat the cream cheese and softened butter. Gradually add the maple syrup and powdered sugar, ¼ at a time, beating until the mixture is soft and fluffy.

6) Using a piping bag, decorate the cupcakes, sprinkle with the chopped speck, and drizzle with a bit more maple syrup.

Have you ever seen a sea of fire on cold spring nights in South Tyrol?

On cold spring nights, when temperatures in South Tyrol's valleys drop below zero, wine growers prepare for the low temperatures by protecting their vineyards with frost-proof candles. These candles, carefully arranged between the vine rows, not only safeguard against low temperatures but also create a magical atmosphere and an incredible spectacle. 🕯️

Fruit growers have always struggled with these atmospheric phenomena, which threaten their daily work and the end-of-season harvest. The technique of using anti-frost candles was perfected as early as the 1960s. During the riskiest periods, farmers diligently monitor the forecasts and, when potential frosts are predicted, they act well in advance to prepare the vineyards by strategically placing the candles and ensuring everything is ready for activation.

The use of this technique contrasts fascinatingly with that employed in nearby apple and fruit tree cultivations, where water is sprayed to form a protective layer of ice over the small buds that will bear fruit. Thus, fire and ice prove to be two mirrored and spectacular strategies for preserving harvests, utilized with expertise and care by the South Tyrolean growers.
