Oli, is a chef who will walk you through a carefully selected repertoire of dishes and share with you the secrets and skills you need to create vibrant and authentic Italian cuisine. These cookery lessons will form part of a varied and exciting itinerary of Italian food experiences, including demos, tours and activities. We are passionate about connecting people with the source of their food, emphasising the importance of respecting ingredients and the environment that creates them. Our bespoke tour of the region's producers showcases people who treat food with love and patience, and do things in harmony with nature. We aim to inspire and empower food lovers who are passionate about Italian gastronomy, giving them unique access to the people, stories and time-honoured methods behind the dishes and ingredients.

Part of almost all of our itineraries is a visit to the wonderful La Maremmana - Caseificio Inno al Sole mozzarella farm and producer. They make great cheese, and are an amazing example of a more sustainable form of agriculture.

Our guests visit the beautiful animals, learn about the farm’s circular economy idea and biogas plant, and of course, try their delicious range of cheeses! They are the prefect example of the type of food producer we love to champion.

Buffalo milk is richer than that from cows, and everything the producers make with it is delicious and indulgent…whether that be their famous mozzarella, or yogurts and even gelato!

One of the things we love most about running our retreats is how they bring people together. Over the past six years, around our table we’ve had people of all ages, backgrounds and belief systems. They’ve travelled in groups, or completely alone. They’ve come for a new adventure, to learn, to meet people or to reconnect with old friends or family. Maybe they’ve even come as part of a healing process after a difficult phase of life.

We’d like to think many of them have shared memories they’ll never forget here, or made friends for life. Food is a great way to unite people, and we can all find common ground in enjoying a meal together, connecting with ingredients and learning to cook new things with love.

The pace of life here is slow, and we are immersed in nature. For us, it’s a very special place, and more often than not, our groups find something special happening to them here too :)

Happy Birthday beautiful Flo! ❤️🎉🎈🎂🎁 We’re starting our journey back to the UK, so we’ll be celebrating her birthday as we enjoy our road trip over the next few days. Our route will see us make stops on Italy’s wonderful Lago Maggiore, over the Alps to Switzerland and the historic city of Basel, onto the Champagne region in France, before finally jumping on the ferry to cross the channel from Calais!

“What’s that one sweet treat that really reminds you of childhood?

Perhaps it was something your mother or grandmother would prepare for you; an apple crumble with custard or a buttery tray of shortbread still warm from the oven. Just the smell of it now gives you a wave of nostalgia, a sense of yearning. Above all it makes you smile.

The food we enjoyed when we were young stays deeply rooted within us. We obviously enjoyed the taste, but it was also a show of love from the person who made it for us. A ritual of care, a big warm hug. Certain dishes bundle all that emotion and memory up and carry them with us throughout our lives. Food has immense power like that.

In Italy, friends have talked about one such treat that recalls more distant, innocent times. A melancholy haze settled briefly over the eyes of one as she told me that chocolate salame had always and would always be her favourite dessert….”

Our London workshops are here to walk you through the process, with an experienced pro pasta maker uncovering all the secrets you need to create something beautiful. Our aim is to give you all the skills to confidently make artisan pasta at home for a lifetime!

⭐️Our London pop-up pasta workshops are back! ⭐️ We’ve got just four dates available, so grab a spot now; we’d love to welcome you for a 2 hour masterclass at The Create Place in St. Margaret's House, Bethnal Green. We’re holding them in March and April 2023.

Our experienced pasta maker Oli will take you through making the perfect dough, then you’ll learn three shapes including stuffed ravioli. There will also be tasty antipasto bites and plenty of organic Tuscan wine as you work! You’ll take your fresh pasta home after the class.

Our aim is to leave you in a place where you can confidently make fresh pasta on your own at home. We’re not interested in just going through the motions, but in truly helping you understand the skills, feel and science involved in making perfect pasta!

Introducing little Nina! ❤️

She’s just three months old and about the size of a large shoe at the moment! For those of you who knew Frank, this is his niece ❤️. Flo travelled all the way up to Normandy to collect her from the same breeder as where we got Frank when he was a puppy.

We’re delighted with our new friend. She’s a little shy but with a giant heart, and plenty of cheeky sausage dog playfulness!
