Transport your taste buds to Morocco with this flavorful Tajine recipe! Follow these 5 simple steps to create a deliciously aromatic dish for your family & friends.

1 - Prepare the ingredients:
Choose your desired protein, such as chicken, lamb, or beef, and cut it into bite-sized pieces.
Chop an onion and a few cloves of garlic.
Gather spices like cumin, turmeric, ginger, paprika, and cinnamon.
Wash and chop vegetables like carrots, potatoes, bell peppers, and zucchini.
Optional: Soak dried fruits like apricots or raisins in warm water for later use.

2 - Season and sear the protein:
In a tajine or a large, deep skillet, heat some olive oil over medium heat.
Add the chopped onion and garlic and sauté until translucent.
Add the meat pieces and brown them on all sides.
Sprinkle in the spices, adjusting the amounts to your taste, and mix well to coat the meat.

3 - Add vegetables and liquid:
Arrange the chopped vegetables around the seared meat.
Pour in enough water or broth to almost cover the ingredients. You can also add a can of diced tomatoes for extra flavor.
If desired, add the soaked dried fruits at this stage for a touch of sweetness.

4 - Simmer and cook:
Cover the tajine or skillet with a lid and reduce the heat to low.
Allow the Tajine to simmer gently for about 1 to 2 hours, or until the meat is tender and the flavors have melded together. Check occasionally and add more liquid if necessary.

Serve the Tajine directly from the cooking vessel, accompanied by couscous or crusty bread.
