What a delightful afternoon by the pool! We began at the swim-up bar, enjoying lobster ceviche, huitlacoche, rajas and nopales green corn quesadillas, guacamole, pico de gallo, and smoked habanero salsa with tequila and chips.
Followed by finger-licking Punjabi cauliflower, roasted bell peppers, cooked with olive oil, garlic, rosemary, and capers. We also savored marinated lobsters al mojo de ajo, seafood paella and a baby spinach salad with red onions, fresh mango tossed in house vinaigrette accompanied with a nice red wine
