My neighbour just popped out for a quick fish.
He caught this right out front.
And shared it, so guess what’s for dinner tonight.
We are so lucky in our little village to have such a resource right out front.

It’s easy when this is how close the place you are staying is to the water.
And yes snapper were caught for breakfast!

Such a lovely warm evening here at The SeaHouse as we wait for guests to arrive.
The sound of the waves on the full tide is pretty full on.

Oh oh visitors ! That’s the trouble with having the water right out front. They just silently arrive.

When your stay at my place coincides with the full moon.
Either by luck or by choice.
By choice is a clever move though.

A brief but fierce storm blew in a couple of nights ago.
It left the the air and the plants refreshed, but me exhausted after battening down the hatches!
After it passed by and the sea was calm again, I took a late night bath in my little pavilion facing the ocean.
Fragrant salts, a glass of wine and the sounds of the water lapping at the shore.
This surely must be paradise.
PS No actual in the bath pics included!

When my guests have a successful day fishing. And generously share their catch with me.
And I get to cook my favourite snapper dish. It’s so easy. And deliciously fresh.
Here you go.
Line a small heat proof dish with baking paper, add some butter.
Put a layer of freshly picked large leaf spinach roughly chopped into the pan .
( It’s perfect that this is growing lusciously in my garden)
Sprinkle over some finely chopped lemon peel.
Add your fillet of snapper on top of the spinach.
Add freshly ground salt and pepper.
And some more lemon peel. And a little more butter.
Whisk two eggs with a fork and pour over the fish.
Bake at 160 degrees on fan bake until the fish is cooked. Ten minutes or so.
If you are eating alone, just add a few dashes of siracha sauce, and eat straight from the pan. Underneath the fish you will find a kind of spinach omelette flavoured by the fish and the lemon.
It’s a less than perfect photo as I started eating it before I thought it was worth sharing!

The pohutukawa are flowering, so we picked these, detached the stamens, and made this. It’s a gorgeous colour but not much flavour.
Guessing it has other qualities, but it sure makes a lovely coloured addition to a long gin and tonic over ice.

And then this happens when Lola decides to show us she still has a sting in her tail. The boulders out front are rolling around under the force of the breakers.

The view today when I looked up from my laptop.
To everyone working inside today, wouldn’t you just want to be this man?
Just him, his boat and his fishing rod.
I guess it’s his turn to do dinner.
Paradise.

Of course I had to go outside to say good morning.

Today it feels like I am getting there with this huge project.
It’s looking lovely as the new plantings of native species start to grow.
Still love those palms though.

The perfect fishing spot just a 30 second walk to the water. And yes, there have been some who have caught their first snapper in less than a minute.
Not me though …. I snagged the pohutukawa on the cliff behind me first time!
Wiser now and technique improved.

Finally, a post which doesn’t focus on our view of the sea!
These gorgeous camellias are growing beside the road before turning into the driveway at The Sea House.
They are tall trees which have escaped the huge project of removing non native species, mainly as they are on the road reserve, have a history and once released from the agapanthus strangling them from below, have blossomed extravagantly.
And the larger pinks have the most delightful perfume which justified this small picking.

When you arrive at The Sea House Tapuaetahi Bay of Islands NZ late evening and haven’t organised dinner.
This is what you do.
Stand right out front on the rocks and catch yourself a snapper.
This one didn’t take long at all to take the bait.
