Day 8
The motors whirring along and the magic of the bluetrain and Charley’s mysterious mechanical took box have transported all the inhabitants to Vietnam .....perhaps he squeezed the bluetrain into the cu chi tunnel !!!!!!
Day 8 Vietnam
Ca cho to
A braised catfish dish served with rice
1lb catfish
2tbs fish sauce
4tbs sugar
2tbs garlic
2tbs shallots
2 tvs oil
3 green onions
1 Thai chilli
1.5 cups of young coconut water
Fresh pepper

Method
Heat sugar in Dutch oven cooking pot until nearly caramel , add oil ,garlic and then the catfish to sear and then turn the fish over . Add coconut to cook fish for 4 minutes , remove fish . Reduce the cooking liquor by half and add fish sauce and chillis
Return the catfish to the braised enriched cooking liquor
Sprinkle chopped spring onions over the top and cracked black pepper
And serve with perfectly steamed seasoned rice

I never meant it to be this exclusive but times are strange these days
