DISHES/RELISHES FOR LUNCH BEEF PILAU {PILAU YA NYAMA}.
Ingredients : 1kg rice,1/4 ghee,150grms garlic,100grms cardamom,50grms black peper,50grms black currants,1kg beef,1/2kg onions,1/4kg irish potatoes,100grms raw ginger,50grms cumin seeds and some salt.
A: First soak the rice in water for some minute, then boil the beef until it is softened but put salt before boiling it.
B: Peel the onions and the garlic and the potatoes. Cut the onions in to thin slices ,divide them into two parts. One portion keep aside , the other portion put them in an aluminium pot and fry them with ghee and sliced potatoes until they become reddish brown.
C: On the other side, pound the other portion of the onions to together with garlic ginger and cumin seed, also put some cumin seeds with black pepper cardamom, cinnamon and black currants in some water.
D: Now pour some soup from the cooked beef in the fried onions and potatoes, then put in the pot ,the pounded onions, garlic, ginger, cumin seeds . After 15minutes of more heat , if the soup is enough , put the soaked rice , but if the soup is not enough, add some boiling water.
After putting the rice , stir it until the rice becomes soft, then put the soaked cumin seed , black currants, black pepper, cinnamon , cardamom and salt { to taste }. Stir again until the mixture becomes stiff and thoroughly mixed lastly, put the cooked beef in the mixture.
E: Switch on the oven and put the pot in it, after about half an hour , check if the top layer has turned brownish. The beef Pilau is ready.
Note: Chicken Pilau or mutton Pilau, the same process can be used.

Machame Route
Machame Route (9 DAY)
Kilimanjaro Machame route is a 7 day trek starting at Machame gate and ascending via Stella Point. There is a night time ascent to the summit. The trip is fully supported with spacious guest tents, mattress and pillow as well as a mess tent with lightweight tables and chairs and all cutleries. Our trips also include a toilet tent in camp and most importantly, knowledgeable professional guides that go through bi-annual training. Our logistics team at our base monitors your trip from start to finish.
DAY 1 – ARUSHA
On arrival you will be personally met by one of our representatives and transferred to Arusha to a hotel. In the afternoon there will be a full briefing with the climbs Manager and your guide. Dinner is included at your hotel.
DAY 2 – MACHAME
After breakfast you will depart by vehicle to Kilimanjaro. At the gate your crews finalizes packing and after finishing with formalities you will start hiking from Machame gate (6000ft). This day hiking is through mountain rain forest to Machame camp (10000ft) and on route you have a picnic lunch. Look out for pretty endemic flora and a gradation of forest zones!

DAY 3 – SHIRA
From Machame camp you hike through heath zone to Shira Camp (12500ft). The first section is relatively steep and altitude is gained rapidly. Picnic lunch is taken on the trail. The zone you pass through is known as the heath zone where attractive Helichrysum and lobelia plants become apparent. Various geologic features can be seen from lava tubes to glacial valleys.

DAY 4 – BARRANCO
This day is trek high sleep low. You ascend into alpine desert and for those that are feeling strong you can even head up to Lava Tower (15200ft) before descending to Barranco camp (13000ft). Lunch is taken as picnic lunch on route. This is long day but note that, the next time you head to this altitude is in two days’ time – great acclimatization day!
Overnight Barranco Camp (breakfast – lunch – dinner)
DAY 5 – KARANGA
From Barranco camp, famous for its’ giant groundsels (Senecio species), you ascend the Barranco wall and hike glacial valleys to Karanga camp (13,500ft). This day is a relatively short day hiking and lunch is taken at Karanga camp. In the afternoon a walk can be taken with your guides for great views of the Southern walls of Kibo and deep glacial valleys – acclimatization walk.

DAY 6 – BARAFU
This day is another half day ascending to Barafu camp (15,200ft). Once again lunch is taken in camp allowing plenty of time to relax before the summit bid. Desolate alpine desert and at times strong winds rip over this camp and yet in the evening splendid views of Mawenzi peak are the norm. A relatively early dinner is taken before heading to rest for the evening.

DAY 7 – MWEKA
Most people depart just before midnight for the final summit bid. Patience and persistence is the name of game to reach the summit and by dawn as the first rays of light start to appear, most arrive at the rim (Stella point- 19,000ft). Ascending from Stella Point affords a relatively short final section to Uhuru peak (19340ft) the roof of Africa! What goes up must come down and your goal today is to reach Mweka camp (10000ft) on your way down the Kilimanjaro Machame route.

DAY 8 – ARUSHA
After breakfast you descend once again through mountain rain forest to Mweka gate 5600ft around mid-day. After saying farewell to your crew, you will be picked up (by a car) and transfer back to your hotel for a well-deserved shower!
Overnight at the Hotel in Arusha (breakfast – lunch – dinner)
DAY 9 – DEPART
This day a day room is held to allow you to relax and check out later in the day. A vehicle is on hand to transfer you to the airport to connect with your international flight, or you may connect with further programs (Eg. Extension to a Safari or Zanzibar for Beach Holidays).

• A small bottle of cordial or squash concentrate (to liven up the flat taste of boiled water) or electrolytes
Tipping
Tipping is an accepted part of life in Tanzania, and you will be expected to tip to reward the climbing crew appropriately to keep them motivated to work at their highest ability. You will be briefed on arrival as to when and how much is appropriate, however, depending on the size of your group you should budget on a personal contribution of around $100-$150 for your trek guides, cooks and porters who accompany you on the trek. This does not include the company group leader naturalist guide. Our naturalist guide receives $50 per client. He is the most highly trained person on the trek team.

17 Days Safari to Mikumi, Ruaha, Iringa, Morogoro, Selous and Zanzibar Island
Day 1: Arrival Dar es Salaam
Meet and greet on arrival at Dar es Salaam airport, then get transfer to Mediterranean Hotel for Dinner and overnight.
Day2 Dar es Salaam /Mikumi National Park
Full day of game drives around Mikumi. There is a rich variety bird species as well as large numbers of giraffes, buffaloes and elephants and close to the water holes also lions, leopards and hippos. Furthermore you can see zebras, lions, wild dogs, pythons, Harte beset, wildebeest, elephants, impala, warthog, eland and other antelopes. Several observation towers enable you to overview the park in its entirety. Mikumi National Park is mostly miombo woodland with gently rolling hills. Overnight Vuma Hills Tented camp (B.L.D.)
Day 3: Mikumi national park

Day 4: Mikumi / Ruaha National Park
After breakfast, depart for Ruaha National Park (long drive of some 7.8 hours via Mikumi and Iringa). In the afternoon we reach the lodge constructed on and around a rocky kopje overlooking the Great Ruaha River. The Lodge provides comfortable accommodation and good food while blending into its surroundings to enable visitors to feel themselves a part of the wild. Both the dining “Banda” and the bar, in elevated position above the river combine comfort and coolness together with the most spectacular views.

Days 5: Ruaha National Park
Two full day game drives at Ruaha National Park with picnic lunch.
Ruaha, with an area of 10,300sq.km. Is the second largest park and second largest elephant sanctuary in Tanzania? The great Ruaha River that flows along its entire eastern border, creating spectacular gorges and scenery, features a large number of hippos and crocodiles. The wide variety of animals include Greater and Lesser Kudu, roan and sable antelope. Bird life is rich, with over 370 species recorded. Overnight at Ruaha River Lodge. (B.L.D.)
Day 6: Ruaha/Iringa Kisolanza old farm
After breakfast you will have morning game drive in Ruaha National park after lunch you will drive to Iringa Kisolanza old farm for Dinner and overnight, later on the day you will visit Kisolanza old farm, take in the fresh air and stretch your legs as you amble around the farm beautiful scenic walks that take you through natural bush and to beautiful dams. Kisolanza Farm is renowned for its diverse bird life. The farm is a birdwatchers paradise

Day 7: Iringa / Morogoro
After breakfast you will drive to Morogoro Town in with picnic lunch box, Dinner and overnight at Nashera Hotel

Day 8: Morogoro / Selous Game Reserve
Depart after breakfast with packed lunch boxes for Selous Game Reserve. The drive will make you pass through farms along Uluguru Mountains and villages. On arrival in Selous you will start with afternoon game drives with overnight at Sable Maintain Lodge, (B.L.D.)
Day 9: North West boundary of Selous Game Reserve
After breakfast you will have morning and afternoon game later on the day you will drive to Selous Kinga lodge for dinner and overnight, (B.L.D.)
Day 10/11: Selous Game Reserve
Start with morning game drives and after your morning game drives you drive back for your fresh lunch at Hippo Campsite. After lunch you will relax along the banks of River Rufiji before going for afternoon boat safari in Rufiji River with overnight at Selous Kinga Lodge.(B.L.D.)
Day 12: Selous /Zanzibar
After breakfast; you will be driven to Selous Airstrip for your flight to Zanzibar.
On arrival into Zanzibar you will be met and taken Dhow Palace where you will be booked in on a B&B basis.
Breakfast and lunch will be provided.

Day 13 Zanzibar
At 9am you will be picked up and taken on a morning Stone Town City Tour (which will take you through fabled Stone Town where history appears to stand still). With visits to the House of Wonders, the Palace Museum (People’s Palace), Dr Livingston’s House and the Arab Fort among others, it is a fascinating look at the essence of Zanzibar. You will see Zanzibar’s bustling market, winding alleyways, ornately carved and studded doors, two cathedrals and countless mosques. Later you will be taken across to Prison Island to see the turtles. Afterwards you will be returned to the hotel for overnight on B&B basis (as there are restaurants in Stone town for your other meals).
Overnight at Dhow Palace again (on a B&B basis).
Day 14: North Zanzibar
At 9am you will be taken to Langi Langihttp://www.langilangizanzibar.com/ at Nungwi, on the northern tip of Zanzibar Island. This is the best beach section of Zanzibar. You will be booked into this hotel on bed and breakfast basis.
On your way you will have a Spice Tour (which includes lunch). The history of Zanzibar would be incomplete without the cloves, nutmeg, cinnamon, pepper and many other spices which brought the Sultans of Oman. They can be seen in the plantations just outside Zanzibar town, and a good tour includes opportunities to dazzle the senses with fresh spices. The spice tour does not only involve spices, but also organically grown herbs and a detailed description about their traditional uses in medicine cosmetics and cooking.

Days 15/16 North Zanzibar
Have a relaxing day at the beach.

Day 17: Zanzibar /Departure
