Easy breakfast for a crowd! Perfect for vacation! 😎

I LOVE Starbs Egg Bites but my wallet does not lol. $5.00 for 2 bites is just crazy expensive to me. So today we made our own version. They are smaller than Starbs but just as tasty!
Here's the breakdown of cost and recipe.
Dozen eggs $1.20 (found them on sale)
16oz carton cottage cheese $0.55 (on sale)
Shredded cheese whole bag $2.00
Bacon pieces only used 1/4 cup so $0.50 worth...maybe
I blended the eggs, cottage cheese and shredded cheese until smooth. About 45 seconds. I did invest in a mini silicone muffin pan, total lifesaver. I used a little olive oil to prevent sticking. I added the bacon to the bottom of the muffin pan and filled about 3/4 way full with egg mixture. I added water to a cookie sheet and placed my silicone pan on top of that. Cooked for about 30mins. At 325 degrees. They came out perfect. My last batch we added the bacon on top of the egg mixture and my daughter requested everything but the bagel seasoning and shredded cheese.
I ended up with 63 bites in total. Spent about $4.25.

Excited to start our 2024 updates! So fortunate that our awesome neighbor was able to meet a Macy's delivery crew who brought our new sectional today. Heard rave reviews about this sofa style and hope our guests love it too!

Sectional is a larger than our previous one but yes, it probably looks quite similar. “Sand” is one of my favorite colors & looks great with blue!

Summer will come quick. If you’ve stayed with us before and want a certain week in 2024, please message us soon to get that held. We tend to fill all summer weeks by the end of Feburary if not sooner. ☀️

Coinjock Marina Restaurant is the perfect spot for a leisurely lunch, hang out with some drinks on the patio while waiting for your vacation house check in time, or join friends for a fun night out. This is sure to be a gorgeous exhibit. Artist Megan Rubino’s work is stunning!

The new exhibit "Women Painters of the Outer Banks" is now on display in the first-floor conference room of the Town hall! Featured artists include Carolina Coto, Dawn Gray Moraga, Megan Rubino, Jackie Tury, and Taylor Williams. The show is open Monday-Friday (excluding holidays) from 9:00 a.m.-4:30 p.m.

Make plans to attend the free opening reception on Wednesday, August 9 from 4:00-6:00 p.m. Enjoy light refreshments, meet the artists and talk to them about their work.
