Founder Owen Rice grew up in Michigan spending time in the forests picking morels. That interest later became a hobby and led him to Oregon where he spent a season harvesting wild mushrooms in the beautiful rainforests of the Pacific Northwest. He quickly fell in love with the culture. Later on when pursuing his degree in environmental studies at the University of Oregon he had the idea that by pu

rchasing mushrooms that could only be grown in the wild we can provide economic incentive for conservation. Since then our mission has been to raise public awareness of the symbiotic relationship between wild fungi, healthy forest ecosystems, and their mutual sustainability. These mushrooms are either sustainably gathered from pristine mountain rainforests of the Pacific Northwest or are organically grown. Our Wild Purple Mountain Huckleberries are delicious. If you haven't tried them yet, here's our favorite recipe to inspire you.

Best Huckleberry Clafoutis*

Preheat oven to 425 F. Make a batter by buzzing 1 cup milk/alternative milk, 3/4 cup flour, 4 eggs, and 1/2 tsp salt in a blender.

Melt 4 Tbsp butter in an oven proof skillet on the stove. As soon as the butter begins to froth, pour the batter into the skillet. Toss about 1 1/2 cups of huckleberries into the batter in the pan, more or less distributing them to all parts of the pan.

(We don't actually measure the berries -- it's about 3-4 large handfuls.)

Slide the pan into the oven and bake for 15-20 minutes until puffy and golden. Eat. So good.

Wasabi as we have generally come to know it is generally not real wasabi. What you get with your rolls or sashimi is more likely a mixture of horseradish colored with spirulina or spinach, oil, sweeteners, and maybe a minuscule portion of the real thing.

We are excited to announce that MycoLogical is now carrying REAL FRESH WASABI ROOT!

Fresh wasabi is a root that is from the same family as broccoli, cabbage, cauliflower, and mustard. It can be difficult to grow, but our wasabi is grown in pristine coastal mountain stream water and not soil like some imported wasabi.

Huitlacoche!! ๐ŸŒฝ

The name huitlacoche is Nahuatl, which is the language of the Aztecs still spoken by more than a million people in Central Mexico today. Utilizing this ingredient also dates back to this time. Corn, or maize, was a staple in the Aztecs' diet, and they used the corn fungus mainly in tamales and stews.

Today, huitlacoche is considered a delicacy in Mexico. It can be found at open air markets, restaurants, and in many specialty dishes across the country, and we are excited to be adding it to the list of specialty foods that we offer at MycoLogical!!

Have you ever heard of Sea Beans?

Sea beans are technically flowering succulents that grow in salty water. They can be found floating around near beaches and in saltwater marsh areas. Their branch-like stalks resemble thick grass that, when eaten, provide a satisfying salty bite. (source: Tasting Table)

๐ŸŒถ๏ธSimple Salsa๐ŸŒถ๏ธ

Salsa can be as complex or simple as you want. The following recipe is basic, and delicious. This makes about 2 cups of salsa.

Chop about 1 and 1/2 cups of tomatoes. We like fairly chunky salsa, but you can cut them into a small dice if you prefer.

Add about 1/3 cup finely diced sweet pepper, and 1/3 cup finely diced scallions.

Finely chop and mix in some Fresno red or other hot pepper -- the amount depends on how spicy you like your salsa. As with all hot peppers, the heat is concentrated in the seeds, so avoid adding the seeds if you want a less spicy dish. โœ‹(Also, make sure you donโ€™t touch your eyes when working with chiles!)โœ‹

Chop up 2 - 4 Tbsp of cilantro, again to your preference, and mix in, along with salt to taste.

If you like a slightly more zingy salsa, add about 1-2 Tbsp of vinegar (red wine vinegar or apple cider vinegar are both good choices), lemon juice, or lime juice.

Stir together and serve with tortilla chips as a dip, on tacos or burritos, put a dollop on a bowl of chile, or use as a sauce on top of grilled fish such as halibut or snapper.

1. Grill the hot peppers. Toss the whole pepper on the grill until the skin chars and the flesh gets soft. While still hot, put the peppers into a bowl and cover the bowl with a plastic lid or bag so the peppers steam a little bit. This makes it easier to pull the skin off the pepper. Peel the skin, and slit the pepper and scrape out the seeds. Chop the pepper up and add to the salsa. Roasting hot peppers mellows the heat and brings out a sweet smoky flavor. Making the rolls are pretty straightforward and are basically shiitake, tofu, and salad rolled in rice paper with carrot ginger relish and a dipping sauce. As far as ingredients, it's nice to combine textures - crunchy things like cabbage or radish slices with smooth things like shiitake and tofu.
We used shiitake mushrooms, tofu, green beans, red cabbage, basil, radicchio, and a carrot ginger sauce for the filling, but go with the veggies you have on hand.
It's useful to prep all the ingredients first. Saute slices of fresh shiitake until browned at edges, fry tofu slices until crisp on the outside, and steam some green beans. Thinly slice red cabbage, chop some fresh basil leaves, and roughly chop some endive or radicchio. Make the ginger carrot dressing(view previous post) if you wish -- it really does give the roll a fantastic slam of flavor, but feel free to use other sauces such as sweet chile sauce.
For the rice paper: Lay a rice paper circle on a large sheet and pour just enough hot water to cover it. Let it set about 1/2 minute, if that, until all parts of the circle soften. Do not let it sit too long, or it can start to disintegrate. Gently pull it out of the water and lay it on another plate. It can stick to itself, so try to lay it as flat as you can, but don't sweat if there are a few wrinkles. Lay the ingredients, including the ginger carrot relish, in a long pile across the middle of the rice paper sheet and gently pull the sheet's edges up and around the filling to make a roll.

Classic Cole Slaw

Perfect as a side or on top of a salad to add instant crunch and flavor to greens. This cole slaw recipe has infinite variations -- dress it up or down to be as simple or as fancy as you want.

Slice 2-4 cups of cabbage and put it in a large bowl. You can slice it thin or chunky, depending on your preference.
Add any other crunchy veggies you want: grated or thinly sliced carrots and sliced sweet pepper are both wonderful.
Chop up and add any fresh herbs: parsley, dill, and basil are all good. Dice one apple into 1/2 inch cubes and add to the bowl.
Drizzle in 1/4 cup olive oil, 2 Tbsp mayonnaise, 2 tsps Dijon mustard,juice of 1/2 lemon and/or a couple splashes of apple cider vinegar, and salt to taste. All of these ingredients can be varied based on how creamy, salty, or tart you like your cole slaw. Mix.
Sprinkle on a handful of toasted nuts -- pecans, walnuts, or tamari sunflower seeds are particularly tasty -- and serve.

Melon Granita ๐Ÿˆ

โ€ข Mix 1/2 cup sugar and 1/2 cup water together in a saucepan and bring to a boil. Reduce heat to a simmer and cook about 10 minutes until slightly thickened. Let cool.
โ€ข Cut 1 large melon in half and scoop out the flesh -- about 2 lbs of flesh. Puree in a blender until smooth. (You may have to do this in batches.) Transfer all batches to the same large bowl.
โ€ข Add about half of the sugar syrup to the melon puree and mix together, then taste for sweetness. Continue to sweeten the mixture by adding about 1 Tbsp of sugar syrup at a time. Youโ€™ll want to sweeten it a little more than your desired final sweetness because frozen food loses some of its sweetness.
โ€ข Spread puree in a shallow pan and put in the freezer. Stir every 30 minutes, breaking up the crystals, until the mixture is frozen and crystalized, about 3 hours.
โ€ข Enjoy on a hot summer day as is or with a mint garnish!

With all the rich food we eat during this time of the year, balance things out with the bright, fresh flavors of a citrus and greens salad. The ebullient colors of grapefruit, oranges, and pomegranates among the greens are a wonderful complement to one another.

For the dressing: Mix 1/4 cup fresh grapefruit juice, 1/4 cup fresh orange juice, 2 Tbsp fresh lime juice, 2-4 Tbsp olive oil, about 1/4 tsp course salt, and a grind or two of pepper. You can also add a 1/2 tsp or so of grated zest of any variety of citrus (we like lime). Shake in a small jar until blended.

Make a salad of mixed greens, diced ripe avocado, and cut up segments of orange and grapefruit.

If you like, you can peel the thin membrane off of the segments by slicing along the narrow edge of the segment and peeling towards the thicker end. This is optional but makes for a slightly fancier salad. Add a few handfuls of pomegranate seeds and some toasted pecans or walnuts. Toss with some of the dressing right before serving, leaving some dressing on the side for those who want more.

Shish*to peppers are generally mild, but every once in a while (1 in 10 times) youโ€™ll get a spicy one. If you are sensitive to spice, give it a nibble first to make sure. Blistered shish*tos with salt are addictive and easy and make a great appetizer or topping for tacos.

To Make: Toss the whole peppers in olive oil and salt, and put in a grill basket or grill pan over medium high heat.

Grill until they blister and char in spots, mixing them around with a spoon a couple of times during cooking. Serve either as is, or with a squeeze of lemon or splash of soy sauce.
:herb:
Blistered shish*tos can also be made on the stove by sautรฉing them quickly in a heavy pan over medium high heat until they blister. Make sure you have a door open in case they smoke.
