Shish*to peppers are generally mild, but every once in a while (1 in 10 times) youโll get a spicy one. If you are sensitive to spice, give it a nibble first to make sure. Blistered shish*tos with salt are addictive and easy and make a great appetizer or topping for tacos.
To Make: Toss the whole peppers in olive oil and salt, and put in a grill basket or grill pan over medium high heat.
Grill until they blister and char in spots, mixing them around with a spoon a couple of times during cooking. Serve either as is, or with a squeeze of lemon or splash of soy sauce.

Blistered shish*tos can also be made on the stove by sautรฉing them quickly in a heavy pan over medium high heat until they blister. Make sure you have a door open in case they smoke.

Calcot Onions: These dense onion stalk with long hollow greens are cultivated by piling dirt up around the growing onion so that the white part of the onions gets longer and bigger. They are traditionally roasted and served with bread to sop up the juices. Entire festivals in Spain are devoted to celebrating -- and eating -- calcots.

Green Garlic: This is garlic before the garlic bulb begins to form, with its long flat greens. Chop the entire plant into your dish for a sweeter, mellower version of garlic flavor. Itโs delicious. We especially love that we donโt have to peel any cloves!

Wild Onions: Also known as three cornered leek or garlic, this sweet version has distinct long greens with a triangular profile when you cut them. All parts of the plant are edible -- bulb, stem, leaves and flowers. Harvested from the Southern Oregon coastal region, it is similar to spring onions but a little milder.

Minerโs Lettuce is a wild green that has crunchy, heart-shaped leaves on red stalks with a spinachy flavor. Eat it raw in salads, or cook it like spinach -- both the stalk and leaves are edible. High in vitamin C, it got its name during the gold rush when miners ate it to prevent scurvy.

Shungiku: These are frilly chrysanthemum leaves with crunchy stems. Herby, slightly astringent flavor, they are traditionally used in Asian dishes and Japanese hot pots. Cook very lightly -- adding it right at the end of cooked dishes. Itโs also wonderful raw in salads.
