This weekend Kelly Graham Properties and I decided to make a “steak” from Lion’s Mane mushrooms (also sold at the below Farmers Market). They were delicious, and tasted 95% like an actual steak! We take fresh Lion’s Mane, add Kelly’s marinade (which includes beet juice & red wine so it can seem more like steak), and put it in a vacuum-sealed bag overnight to marinate. Then use a heavy press to flatten on the grill and cut like a steak. Enjoy!

As you may or may not know, when I’m home I eat a high percentage of vegetarian meals…even though I’m not a vegetarian. If you’ve ever been in a commercial chicken house or feedlot, you’ll know why I try not to consume “agribusiness” food. It’s not just bad for the environment, it’s bad for our health because their “normal” condition requires antibiotics basically all of the time…which reduces their effectiveness for all of us. Most importantly, and my main reason, is it because the animals live terrible lives.

I am so happy to buy meat from a family farm, such as 455 Farms in Tabor City, where the animals are treated properly until slaughter. I prefer to shop at a local Farmers Market such as the one at the Horry Georgetown Technical College- Grand Strand Campus culinary school on Thursdays, where you can get eggs, cheese, mushrooms, chicken, steak, etc. In many countries you don't have to worry about it because that is they way they've always done it.

It’s hard to tell from a photo but this iceberg is about a 1/2 mile wide and 30 stories high! Icebergs are parts of glaciers that fall off into the sea and they are made of fresh water.
