Pilaf is the boss of everything! 😋 In Uzbekistan, pilaf can replace all other food. Even the word "osh" itself is translated as "pilaf" and as "food".

In each region of the country has its own recipe, with more than 70 varieties of the dish currently available!
Understanding that trying all varieties may be a hassle, we advise you to try at least the basic and most popular versions, namely:

🔷 Tashkent pilaf. Traditionally, this version is prepared from an expensive long grain rice called “laser”, and includes a lot of additives: chickpeas, raisins, quail eggs, kazy (horse meat sausage), lamb and beef. The meat in the Tashkent pilaf is prepared in one large piece, which is then cut in portions when serving.

🔷Samarkand pilaf. This version of the dish is made from the prolonged Khorezm rice and mostly includes yellow carrots. The main trait of this version is that the ingredients are not mixed during cooking, but are prepared and served in layers: meat, carrots, rice. Also, Samarkand pilaf does not contain as much fat as the Tashkent or Fergana versions.

🔷 Bukhara pilaf. Natives of Bukhara like to add sweetness to their pilaf by adding raisins, dried apricots and sweet red carrots. All the ingredients of the Bukhara pilaf are boiled separately until half cooked, then laid out in layers in a cauldron and cooked together.

🔷 Andijan pilaf. Like any pilaf of the Fergana Valley, it is made from “dev-zir rice”, which is tougher than the other rice grains, reddish in colour, and absorb a lot of liquid. All ingredients are fried in a large amount of oil, so you can immediately recognize Andijan pilaf, among others, as it has a unique brown colour. In it, unlike Bukhara, there is not a single gram of sweetness. Only garlic and hot peppers, only hardcore :)

So, which one is your favourite?

Welcome to Uzbekistan
The region’s cradle of culture for more than two millennia, Uzbekistan is the proud home to a spellbinding arsenal of architecture and ancient cities, all deeply infused with the bloody, fascinating history of the Silk Road. In terms of sights alone, Uzbekistan is Central Asia's biggest draw and most impressive showstopper.

Samarkand, Bukhara and Khiva never fail to impress visitors with their fabulous mosques, medressas and mausoleums, while its more eccentric attractions, such as the fast disappearing Aral Sea, the fortresses of desperately remote Karakalpakstan, its boom town capital Tashkent and the ecotourism opportunities of the Nuratau Mountains, mean that even the most diverse tastes can be catered for.

Uzbekistan is an extremely friendly country where hospitality remains an essential element of daily life and you'll be made to feel genuinely welcome by the people you meet.

Tashkent is the capital of Uzbekistan and is a metropolis of over 2.5 million people. The city is set out as a grid of straight, wide streets and avenues, interspersed with many green areas (parks, squares, and gardens) and fountains.

This marvelous city embodies the modern elegance of many other capitals of the world; at the same time, as an eastern city, Tashkent has its own unique flavour.
Many of Tashkent’s tourist sights are concentrated in the Old City, which is one of the few districts that has preserved its traditional culture in the rapidly-changing metropolis. The spirit of old Tashkent lives here, in the cozy courtyards of the hospitable mahallahs, the bustling Chorsu Bazaar, and the blue domes of the Khast Imam complex. In this part of the city there are artisans, teahouses, and bakeries.

Other Tashkent sights worth visiting include the Tashkent TV Tower, the German Church, the Polish Church, Amir Temur Square with the famous Tashkent astronomical clock, Independence Square, and the former residence of Prince Romanov, which was designed by architects Benoit and Heinzelmann.
