Loved meeting with @koi_knives founder Ramon who had sent knives as gift to us at @beachsafari_currarong .. totally out of the blue .. such a generous gesture as he wanted to thank us for endiess hours watching Food Safari.
I had to visit now I’m in Adelaide and give him a gold coin (tradition so friendships are not cut)
What beautiful knives. I had to buy one of the wooden magnetic blocks which look fabulous and will hold our knives. They’re so reasonably priced (as are the knives) at $65. Mount on Velcro. Ramon started this business making Japanese knives after a brain tumour diagnosis made him realise it was time to leave his tech job and start his own business with friend Shannon. Wow.

The power and the passion. For 30 years chef Peter Conistis has drawn inspiration from his Greek heritage to create dishes singing with flavour. Customers over many years have always begged him not to take them off the menu. On Saturday our Gourmet Safaris guests enjoyed all the top hits from the “father of modern Greek cuisine” at his waterfront restaurant @ploossydney - from taramasalata (black and luxurious served with house-made pita bread) through crab and haloumi tart; eggplant and scallop moussaka, watermelon salad with prawns; duck and black olive pie; chocolate baklava with chocolate and coffee ice cream (wow) and fresh figs.. all with superb wines from @gapstedestate - prosecco, rosè, Pinot Gris, Tempranillo And absolute waterfront! We are so fortunate to visit behind the scenes at ethical butcher @featherandboneprovidore and see skilled butchers like Dean, David, Booey and Sarah slicing veal, using every part of pasture raised animals. Our Gourmet Safaris guests get a whole new perspective of food and the assured hands that prepare it.

Whole roast pumpkin part of an incredible lunch spread @stix.cafe ..cooked whole then inside of pumpkin scooped out and mixed with currants, oregano and pine nuts and back for further baking before being topped with toasted sunflower seeds and edible flowers. This was wonderful . Thanks to sous chef Gary and @chef_stix for 5 star lunch!
