Perfect weather for elderflowers today. Cordial with lemon balm added for extra lemony zing and calming properties. ☺️
Elderflower Cordial
25 heads of elderflowers (picked on a sunny day)
10-12 sprigs of lemon balm (optional)
1.5 kg sugar
1.5 litres water
3 unwaxed lemons
50g citric acid

Place sugar and water in a large pan stir and bring to the boil. Take off the heat, add the elderflowers, lemons, lemon balm and citric acid. Give a good stir, cover and leave at room temperature for 24 hours.

Strain through muslin or a clean tea towel and pour into sterilised bottles.

Tip: Elderflowers can also be frozen. Freeze 25 heads in a bag ready to make cordial at any time of year.

Yesterday's change in the weather to much more settled conditions allowed me to get out to do some work for a client and whilst there I was able to get another of these 360 degree panoramas. This time from close to the oxbow bend of the River Brit, it was still very soggy underfoot but with no wind and blue skies with fluffy white clouds it was quite tranquil. 22/02/2021
