MODICA | But unlike some of the other Unesco-listed cities in the area, it doesn't package its assets into a single easy-to-see street or central piazza: rather, they're spread around the town and take some discovering. A Unesco World Heritage Site, Catania's central piazza is a set piece of contrasting lava and limestone, surrounded by buildings in the unique local baroque style and crowned by the grand Cattedrale di Sant'Agata. At its centre stands Fontana dell'Elefante (1736), a naive, smiling black-lava elephant dating from Roman times and surmounted by an improbable Egyptian obelisk. Another fountain at the piazza's southwest corner, Fontana dell'Amenano, marks the entrance to Catania's fish market. Legend has it that the elephant belonged to the 8th-century magician Eliodorus, who reputedly made his living by turning people into animals. The obelisk itself is said to possess magical powers that help ease Mt Etna's volatile temperament. Much younger is the 19th-century Amenano fountain. Created by Neapolitan sculptor Tito Angelini, the splash-happy piece commemorates the Amenano river, which once ran above ground and on whose banks the Greeks first founded the city of Catania, which they named Katáne.

Completed in 1890 and made for homegrown composer Vincenzo Bellini, Catania's opera house is suitably lavish, from the stucco-and-marble extravagance of the foyer (dubbed the ridotto) to the glory of the theatre itself, wrapped in four tiers of gilded boxes. Its painted ceiling, by Ernesto Bellandi, depicts scenes from four of Bellini’s best-known operas. The Associazione Guide Turistiche Catania (www.guidecatania.it; [email protected]) runs 45-minute guided tours; email to book a tour and call ahead to confirm times as the theatre isn't always open.

Catania’s historic core is a Unesco-listed wonder, where black-and-white palazzi tower over sweeping baroque piazzas. One minute you’re scanning the skyline from a dizzying dome, the next perusing contemporary art in an 18th-century convent. Beneath it all are the ancient ruins of a town with over 2700 candles on its birthday cake. Indeed, food is another local forte. This is the home of Sicily's iconic pasta alla Norma and the extraordinary La Pescheria market.
Keeping an eye on it all is Catania's skyscraping frenemy, Mt Etna, a powerful presence that adds another layer of intensity and beauty to Sicily's second-biggest city.

Set amid the rocky peaks northwest of Modica, Ragusa is a town of two faces. Hilltop Caltagirone is renowned throughout Sicily for its ceramics. The area's high-quality clay has supported production for more than 1000 years and still today the industry is an important money-spinner. The town's earliest settlers worked with terracotta, but it was the Arabs, arriving in the 10th century, who kick-started the industry by introducing glazed polychromatic colours, particularly the yellows and blues that have distinguished the local ceramics ever since.

Set amid the rocky peaks northwest of Modica, Ragusa is a town of two faces.
Sitting on the top of the hill is Ragusa Superiore, a busy workaday town with sensible grid-pattern streets and all the trappings of a modern provincial capital, while etched into the hillside further down is Ragusa Ibla. This sloping area of tangled alleyways, grey stone houses and baroque palazzi on handsome squares is effectively Ragusa's historic centre and it's quite magnificent.
