Cool beans! (cool olives just doesnt work), thank you olive trees - Villa Papini's first olive oil production: just over a ton of olives yielded about 150 Kg of extra virgin olive oil at 13.3% with low acidity...who said old trees cant produce good olives and olive oil!! :)

Thanks a ton to everyone for all your wonderful comments and support, it really means a lot to me. This place really did seduce me and I may be crazy, but that ok because it truely is a special place and its meant to be shared and enjoyed by others. Augeri a tutti!

Friends and fans, The lesson is that there will always be work to do here and it will never be perfect, therefore I just need to "do-it" and start.
