Actually tomatoes are really not that healthy because, uncooked, you get almost no lycopene. The oxalic acid content will eventually give you kidney stones which are calcium oxalate. The thing that saves you is eating them with CHEESE, so here is what happens: Cheese and diary products have calcium salts in them. So eating cheese the calcium combines with the oxalic acid in tomatoes to form calcium oxalate in your gut. This compound cannot be absorbed in your intestine and is therefore eliminated as waste. Presto, no kidney stones. The old joke in New Jersey was that if there were no tomatoes, and its acidic bacteria killing nature, there would be no Italians. The other part from Dr-Rudi.com is that if there was no cheese to eat with your tomatoes, there would also be no Italians. I always eat cheese or other milk product with tomatoes.
