The Bartolotta Restaurants is a Milwaukee-based restaurant group owned by brothers Paul and Joe Bartolotta. Their first restaurant, Ristorante Bartolotta, opened in 1993 and today, the group owns and operates 15 restaurants and catering facilities, including four upscale establishments, two upscale casual concepts, a pair of supper clubs, a pizzeria and a lakefront custard stand, as well as three quick-casual restaurants in the Milwaukee airport.

We took great pride in hosting the National Restaurant Association Educational Foundation's Wisconsin ProStart Career & Industry Expo on November 19th at both Discovery World and Harbor House. This incredible event provided a fun day of learning, career exploration, and hands-on experiences to introduce students from around the state of Wisconsin to the hospitality industry. Our chef team led creative hands-on culinary demonstrations, and our very own Joann Hansen, General Manager of Bartolotta Catering & Events at Discovery World, joined Chefs Dan Jacobs and Dane Baldwin in a panel discussion over lunch.

Special thanks go to Chef Aaron Bickham, our Director of Culinary and Executive Chef of The Bartolotta Restaurants, for his dedication to the ProStart program and for bringing the hospitality community together for this event. A huge thanks to our partners who stepped up to sponsor and support this event, including Discovery World, Sysco, Boelter, Events by Design, and Clothes Clinic.

Chris joined The Bartolotta Restaurants in 2021 and has since gained experience as a line cook at Bartolotta’s Lake Park Bistro, Bacchus – A Bartolotta Restaurant, and Ristorante Bartolotta.

Harbor House Executive Chef Michael Genre recently participated in March of Dimes' Feeding Motherhood event where he prepared Bluefin Tuna Tartar bites topped with caviar.

Combatting the inequality in maternal healthcare that exists today, March of Dimes focuses on raising money to ensure all pregnant mothers have proper access to care. For this event, chefs were asked to display a childhood photo at their station, you can see a younger Chef Michael off to the right of the group!

This was an amazing event, and the Harbor House team was proud to support such a worthwhile cause!

Yesterday, Representative Cindi Duchow of the Wisconsin State Legislative, presented Maria Bartolotta with a citation from the Wisconsin State Assembly that acknowledges her as one of the Wisconsin Restaurant Association’s Top 20 women in hospitality. This citation, honors Maria as a trailblazer in the hospitality industry and recognizes how she has played a vital role in the growth and success of The Bartolotta Restaurants for over 30 years.

In her touching acceptance speech, Maria shared that the heart of her hospitality career has always been the genuine connections she builds with others – a gift that has defined her journey in the industry. Looking back with pride, Chef Paul Bartolotta spoke of his sister's remarkable path, from the earliest days of The Bartolotta Restaurants to her continued leadership that shapes the company today. He also shared that their close bond as siblings has made Maria such a great partner and confidant who has helped our company reach new levels of success.

This past weekend, Corporate Executive Chef Aaron Bickham represented The Bartolotta Restaurants at the first-annual Flavors of Africa & Diaspora Wisconsin Gala & Best Chefs Competition. This event offered a unique and immersive experience that celebrated all aspects of African culture and cuisine.

Alongside entertainment that highlighted the continent's diverse cultures, chefs prepared small plates that reflected cultural immersion. Chef Bickham prepared New Year’s Black-Eyed Peas; a traditional family dish prepared with braised black-eyed peas with smoked pig feet served to bring luck into the new year.

We are so proud to participate in such a culturally important event, thank you to all who attended!
