There is nothing quite like the change of seasons and the rice harvest during the full moon celebrations. The smell of golden rice floats on the air and all around there is the calm commotion of locals separating and drying this staple of life. Here 1000 square meters can yield 600 kilos of rice twice a year. Enough to sustain many a local family for months.

It is a special joy to get to enjoy this dance, ….while watching from the comfort of our garden with a nice cold beverage .;-)

On special occasions we get the pleasure to host some beautiful global travelers and last week when our guests asked for a modern Vietnamese seafood bbq, we could not help but have a little fun ;-)

Canapés: Crab Pho Cuon with cucumbers garnished with red caviar and served with a cashew nut yogurt sesame dipping sauce

Salad: Vietnamese vermicelli salad with 10 hour slow cooked cuttlefish, burrata, and balsamic cream finish

Main: BBQed lobster with lemongrass garlic butter sauce, slow cooked and BBQed corn on the cob with fried sweet potatoes all served with fresh lemon and shallot mayonnaise

Dessert: Che Chuoi with Marou chocolate, fresh coconut meat shavings, and candied walnuts

The danger of staying a few weeks at Villa Iliou is that there is so much more time to spoil our guests. And for this fun family when they requested an Italian feast for their 3rd tailored dining experience with us we were only too happy to oblige naturally with this special 4 course celebration of Tuscan cooking:

Antipasti:
• Creamy ricotta dip with roasted cherry tomatoes
• Marinated mushrooms with raspberry vinaigrette and almonds
• Fried sardines served with red lumpfish caviar and dill on top of a bed of arugula

Salad:
• Caprese salad with fresh Da Lat burrata

Main course:
• Fruiti di Mare in wine sauce with fresh spinach spaghetti
- & a 5 Mushroom truffle cream sauce over fresh tagliatelle with pine nuts (for our lucky vegetarian guest)

Dessert:
• Zabaglione with Strawberries

When it comes to our guests, we love pushing the limits, creating some memories, and putting lovely souls into deep food comas!

- Tamarind lemongrass slow cooked chicken in fresh rice noodle wrap with sesame yogurt cashew nut dipping sauce.

Main course:
- BBQed Galician acorn fed pork secreto steak in Quang Nam marinade served with a red wine reduction onion confit
- Twice cooked sweet potatoes served with fresh truffle mayonnaise
- Vietnamese slow cooked duck breast with Sampan Rhum molasses flambé on the skin for the finish
-Hoi An styled mushroom salad with pine nuts

Desert:
- Banana flambé Sampan Rhum style with taro ice cream and Sampan Cacao infusion served with caramelized passion fruit

Main: Seared Duck breast with Sampan mollases flambéd on top, banana flower salad with fresh burrata and truffle balsamico and 2 times cooked sweet potatoes garnished with truffle mayonnaise

Desert: Che Chuoi (Viet banana pudding) with fresh coconut, roasted pine nuts, and Marou chocolate served on top
