SCHOOL HOLIDAY BAKING // Looking for some baking idea's with the kids? Well these yummy Chocolate, Date & Almond protein balls are sure to be a winner.

1 cup of raw, whole almonds
1 cup of fresh dates (or soak dried dates for 2 hrs prior to using)
1 tbsp natural peanut butter (or any nut butter)
3 tbsp coconut oil
3 tbsp cacao (or good quality cocoa)
2 tsp cinnamon
1 tbsp honey
1/2 cup desiccated coconut for rolling

Process the almonds until they are like crumbs.
Add the rest of the ingredients and process until well combined.
Using wet hands, roll the mixture into balls and place on a plate. Roll in the desiccated coconut to coat. Chill in the fridge for an hour to set (if you can wait that long) and enjoy as a healthy eating snack

Makes: 20 balls. Calories per ball: 100.

THEY ARE BACK - Humpback Whales have been spotted as they prepare for their long journey north. They can be spotted in Flinders Bay from May to July, before migrating to the warm waters north of Broome.

These giants of the ocean are a must see when visiting the South West. Make the time to check out some of the whale watching tours during your stay.
