After 13 years, Paris welcomes back the « Course des Garcons de Café »! ☕️ This « Waiters Race » began at the turn of the 20th century and was a way to showcase the professional talents of Parisian waiters! Today, gal pal @lisa_anselmo from @savethepariscafe and I watched waitstaff dash two kilometres through the streets and over cobblestone paths, carrying a serving tray topped with a croissant, coffee and glass of water, as we cheered them on alongside a excited crowd!

OMG, you guys! So many of you have asked about my Bœuf Bourguignon recipe from last weeks stories! #didyouknow that Bœuf Bourguignon dates back to the Middle Ages and was considered peasants food?! During this time, slow cooking was popular in rural areas because it was cheap, filling and could feed many mouths? Since then, the popular dish has evolved to a staple of French cuisine and is one of my favourite dishes! Today, I am going to share with you, my go to recipe, courtesy of @anthonybourdain
2lbs beef, cut into 1½” pieces
Salt and pepper
¼ cup olive oil
4 onions, thinly sliced
2 tbsp flour
1 C red Burgundy
6 carrots, cut into 1” pieces
1 clove garlic
1 bouquet garni
Chopped parsley
1. Season the meat with salt and pepper. In a Dutch oven, heat the oil over high heat until it is almost smoking. Add the meat in batches and sear on all sides until it is browned, setting it aside as it finishes. When all the meat is a nice, dark brown color and has been set aside, add the onions to the pot. Lower the heat to medium high until the onions are soft and golden brown (about 10 minutes). Sprinkle the flour over them. Continue to cook for about 5 minutes, stirring occasionally, then add the red wine. Scrape up all that really good fond from the bottom of the pot with your wooden spoon. Bring the wine to a boil.
2. Return the meat to the pot and add the carrots, garlic and bouquet garni. Add just enough water (and two big spoons of demi-glace, if you have it) so that the liquid covers the meat by one-third -- meaning you want a ratio of 3 parts liquid to 2 parts meat. This is a stew, so you want plenty of liquid even after it cooks down and reduces. Bring to a boil, reduce to a gentle simmer, and let cook for about 2 hours, or until the meat is tender. (Check the dish every 15 to 20 minutes, stirring and scraping the bottom of the pot to make sure the meat is not sticking or scorching. You should also skim off any foam or scum or oil collecting on the surface
It’s #winewednesday and today I am taking you back to the Loire Valley where I was holidaying a couple of weeks ago! One day, we spent the afternoon visiting the local caves of Reuilly! I had never heard of this appellation before and was happy to learn about these news wines. The vineyards of Reuilly date back to the early 7th century, when Dagobert I, King of the Franks, gifted the land to the Abbey of Saint-Denis. These vineyards supplied wine to the nearby medieval towns of Bourges and Vierzon, and was shipped as far as Paris, England and Flanders, via the Cher and Loire Rivers! In 1365, the Duke of Berry, issued a charter overseeing the wine production in Reuilly which stipulated harvest dates and established a wine tax on these wines! At the end of the 19th century, after the phylloxera vine disease ravished the land, new vines were planted and local winemaking was revived! 🍇 One of the local specialties is called Le Reuilly Gris. This wine is made with 100% Pinot Gris grapes, using the « rosé de pressée » method, meaning the grapes are pressed as soon as they are harvested. There is a very short time of contact between the grape juice and skin, resulting in an especially pale coloured rosé wine!
