Every year Saint Augustine gathers to celebrate the Datil Pepper with professional chefs vying for recognition by creating dishes of all kinds using Datils as a primary ingredient. Visitors to the Festival purchase Tasting Coupons and then visit each booth with a judging sheet to determine the People's Choice Awards. Professional judges also rate the offerings for another set of awards and bragging rights for the coming year.
