We’ve hosted busy kids and teens in our cooking school kitchens this summer. They’ve learned valuable kitchen skills that will stay with them for life. From making crepes and pasta to creating their own takeout, it’s been a productive summer working with the next generation of chefs!

Our fresh Heirloom Tomato Tartine features Waxwing Farm heirloom tomatoes atop our toasted house-made brioche. It's dressed with red wine vinegar, whipped Brillat-Savarin cheese, pistou puree, pickled pearl onions, herbs, capers, and a sprinkle of crunchy Maldon salt.

1️⃣ It's pronounced "kween ah-mon."
2️⃣"Kouign amann" means "butter cake" in Breton, a Celtic language spoken in Brittany, France.
3️⃣The Kouign Amann was created in 1860 as a mistake due to a flour shortage. It's primarily made from butter and sugar, making it an ultimate sweet treat.

Two weeks ago, we held a special six-hour croissant baking workshop in our St. Paul location. Students practiced lamination with rough puff pastry and shaping croissants, and they talked about the science behind making croissants with Chef Zoë.
Chef Zoë's favorite part of the class is talking about the science behind making croissants in the oven. "The dough is rising, and the yeast is expanding until the point it dies. While this happens, the butter melts and evaporates, creating the flakey layers."
