Over the winter and into spring, we had the pleasure of working with Falmouth University BA Marine and Natural History photography student - Belle. The purpose of the film was to highlight the people whose lives or values are intrinsically linked to the natural world and how our business has achieved it's goals over the years. We loved what Belle came up with and are still very proud of our small Cornish business which combines low environmental impact with high social impact.

The contrast to the summer jungle that is 7th Rise right now, this film was shot in March and April 2024.

Wild Venison

We've been teaching people wild game butchery and foraging at 7th Rise for over 10 years now. Mostly on our group 3 day adventures and more recently on day courses for locals and day travellers.

We are passionate about food - especially wild, sustainable and nutritious food. Get learning about what is truly sustainable and support growers, fisheries and farmers that are doing it right.

Here's Stu's foraged salsa verde recipe which he teamed with venison loin cooked over fire last weekend

(approximately)
12 x common sorrel leaves
10 x wild garlic leaves
10 x three-cornered leek leaves
6 x nettle tops
6 x dandelion leaves
6 x wall pennywort leaves
1 x handful of hairy bittercress leaves
generous glug of olive oil
generous pinch of salt and black pepper

Roughly chop all of the leaves, mix with the oil and seasoning and adjust to taste. enjoy
